First of all, your body will be stronger and healthier on a vegetarian diet. I've been vegan for ages and I'm healthier than most of the people I know. I went to a nutritionist and found out the amount of protein and calcium and such that I need to get and the foods that I can get them from and it really helped. I work on an airplane all day and am in different cities every night and if I can do it in a healthy way, trust me, anyone can. Call the nutritionist before hand and tell them you want to work with someone that understands a vegetarian diet. If they sound reluctant, go to the next person on the list. Vegetarianism is popular because it's healthier for you and the environment so you won't have a problem finding a nutritionist. You really only need to go once or twice to get the info and your health insurance will probably cover it. I didn't go until I had already been vegan for a long time and the only reason I went was because I needed help finding veggies meals that could last for a week in a cooler! Eat plenty of legumes (chickpeas and black beans are my favorite), green leafy veggies (for iron and calcium), and take a multivitamin. You should be doing all of these things if your vegetarian or not anyway! Good Luck!

Largely animal products like meat provide protein, fat, and perhaps iron. You can swap meat for proteins like soy, wheat, corn and more. To ensure good health eat a balanced diet including a good mix of grains, proteins, fruit, and vegetables. Eating dark leafy greens like spinach, kale, collards, etc. will make up for any iron you will not be getting from meat and these greens are also very high in calcium.

(BEWARE of short answers on this very complex issue).

Be aware that the more nutrient-rich foods that you eliminate from your diet, the more difficult it becomes to make certain that you are receiving adequate levels of all the nutrients that your body needs.

Nutrients to watch for (to ensure adequate intake) are Protein (esp. the amino acid Lysine), Omega-3 fats, vitamin B-12, vitamin D, Iron (esp. for females), Calcium, & Zinc.

Some non-meat eaters only give up mammal meat (like beef & pork). Others may also abstain from eating bird meats -- like chicken & turkey.

You can still very easily eat a very healthy diet if you decide to eat fish -- especially salmon & sardines. Fish is an excellent source of protein and also supplies very healthy & essential (necessary) Omega-3 fats -- DHA and EPA.

If fish is also eliminated from the diet then you will need to get your Omega-3 fats from (ground) Flax seeds & other sources (soy & walnuts have small amounts). This may not be quite as good as getting some of those fats from fish however. In a non-fish diet, it would be a good idea to get those fats from both flax & also from an ALGAE supplement that provides DHA.

If you decide to give up ALL meats & fish, you might want to consider still consuming eggs & dairy (milk, yogurt, etc). This should make it much easier to make certain that you are getting all the nutrients that you need (esp complete protein & vitamin D). This type of diet is still considered to be a form of vegetarianism.

Vegans eat a strict vegetarian diet -- no eggs, dairy, or meat of any kind. A vegan diet is the most difficult diet to ensure that you are enough of all essential nutrients.

Vegetarians, especially vegans, should make certain that they get enough protein, minerals and B-12. A vitamin B-12 supplement might be a good idea for many vegetarians.

SOY is one good source of complete protein but do NOT overdo it -- VERY high levels of soy may not be a good idea (esp for males). Aside from eggs & dairy, other good sources of complete protein include Buckwheat & Quinoa.

Eating a wide variety of partial protein sources is a very good idea - grains, nuts (esp almonds & walnuts), seeds, rice, legumes (peanuts & beans), hummus and pita. This variety should also supply you with most B vitamins & other nutrients.

Note that the need to combine "complementary" proteins for every meal is a MYTH. Vegatarians just need to make sure that they either eat complete protein foods &/or eat a variety of "complementary" proteins over the course of SEVERAL days.

First of all, why start now?

I would first try being a lacto-vegetarian. Lacto-vegetarians include milk and other dairy products in their diet. Lacto-ovovegetarians eat milk, dairy products and eggs. This would help to provide protein, vitamins and calcium that are especially important for women.
