Hi! potatoes become soft on boiling because it axcess the extra water on boiling when you put the fire for so long.maximum time potatoes take at list 10 miniute after having the air is full in the pressar cooker.just put the gas slow for at least 10 miniute.

Because they are cooking. This is why our ancestors originally started cooking food - meat and vegetables etc - to make them easier to eat.
