How come everytime I have a crush on someone and find out that they like me back, I am no longer attracted to them?

Consciously or subconsciously, you're looking for the one true man to love. These guys you are attracted to, it's most likely due to their outer features. It's natural for all humans to be superficial when looking for someone, but its the process to getting to know them that that trait fades. These guys are not sparking your interest, and so you feel no need to pursue them. When you crush on the right man, you'll know it. It's instinct.
