Try this:
Ingredients:
Two waffles - frozen or homemade
Peanut butter
Jelly
Optional ingredients: marshmallow spread, bananas, chocolate chips, honey, dried fruit...
Spread peanut butter on one waffle, jelly on the other
and make a sandwich -- On top put chocolate chips to spell out mama bear!
Or scramble some eggs, make some toast and cut up some fruit. Arrange the plate so that you can spell what you want in the middle with nuts, fruit or chocolate chips. You can also use squeezable honey and write the words with that and sprinkle it with brown sugar or crushed cereal.
You are such a sweety that I am sure that your Mom will love and appreciate anything you do for breakfast. Don't forget to clean up after, this will make your Mom's day!!

The easiest breakfast I can think of would be to whip up some plain old pancakes, some sunny side up eggs, and sausage links or bacon.
Arrange the eggs and bacon on a plate in a little smily face, and cut the pancakes into heart shapes before placing them on a second plate. Serve with some fresh fruit (bowl of chopped bananas and apples, or something like that) and a glass of milk. Bam--an excellent breakfast that covers all the food groups.
For extra effect, add a bit of red food coloring to the pancake batter, so they look like red hearts when you're done. I actually used the heart-shaped pancakes for a Valentine's day idea once, but there's no reason they won't work for Mother's Day as well.
Edit: Words in food? Err..can't really help you there--I'm no chef. Unless you took some chocolate syrup and wrote "Mama Bear" on the topmost pancake?

Cheesy Eggs on Toast
* 1 slice of bread (any kind)
* 2 eggs
* 2 tablespoons of grated cheese (any kind)
Place small skillet on stove and heat on low until warm. Crack eggs into a bowl, beat well, and add cheese.
Pour into warm skillet and stir until eggs are soft or firm (depending how you like them. While eggs are cooking, toast bread.
Top the toasted bread with cooked eggs. Serve hot.

Fresh Fruit Breakfast Parfait
* 1 Cup Plain Yogurt
* 1 Cup Homemade Granola
* 2 Tablespoons Honey
* 2 Cups Fresh Berries (raspberries and blueberries)
* 2 Kiwis
* Whipped Cream
Layer all ingredients. Top with whipped cream and a fresh mint leaf.

Hawaiian Omelette
(3 servings)
* 6 eggs
* 1/2 cup small pineapple chunks
* 1/2 cup cubed ham
* 1/2 cup Monterey Jack cheese
* 1/2 cup Cheddar cheese
* 6 Tablespoons water
* salt and pepper -- to taste
Beat together eggs, water, salt and pepper.
Thinly coat your skillet with vegetable oil spray. Heat over medium high.
Pour egg mixture into pan. When eggs are almost set, sprinkle half of the omelette with remaining ingredients.
fold other half of omelette over filling. Continue cooking until cheese melts, about 2 minutes.
Cut omelette into 3 wedges and serve.

Cinnamon French Toast Waffles
(1 serving)
* 2 slices whole-wheat bread
* 1/4 C liquid egg substitute OR 1 egg
* 1/4 tsp. vanilla
* 3 TB milk
* 1/8 tsp. cinnamon
* Dash of salt -- optional
* Vegetable oil spray
Pre-heat waffle iron while mixing up the following: In a medium-sized shallow bowl, stir together the egg, milk vanilla cinnamon and salt.
Dip bread into mixture, making sure to soak up all of mixture between the two slices.
Spray the bottom of waffle iron and place one slice of bread in the center of iron. Spray top of waffle iron and close it. Cook accordingly. This recipe can easily be double and tripled.
French toast and waffles together! The best of both worlds!
