The main dish is baked chicken. I take skinless bonless chicken breast and spray it down with conola oil, then sprinkle lemon pepper salt on it. Bake on 375 for about 45-60 minutes. For a side dish I cut up eggplant and onion and mix it into a pan. I then spray it down with conola oil (see a patern :->) and sprinkle a lot of pepper on it. Cook until desired doneness.

This sounds good, but perhaps some color should be added, like perhaps a red pepper, or green. Other than that, the meal sounds good,

Just off the top of my head I think that is to long to bake boneless chicken breast also I personally would prefer a starch with dinner IE-rice or a potato and a salad as well but that's just what I prefer

That's it? Each sound good individually, probably good together too. But where is the color? I guess for a family meal it might be okay. For dinner guests, add some color or maybe even an extra veggie.

No offense, but it seems kind of colorless. How about a green, such as kale or broccoli? Or maybe even strips of basil. And carrots or sweet potatoes.

Sounds good but you need some kind of greens with it. Maybe green beans? cabbage and a baked potato?
