This is a great recipe and it's easy!!!!

1 lb Black Beans
8 cups of water
1 1/2 cups Sofrito(see below)
Salt and freshly ground pepper to taste

Rinse beans. In a large saucepan combine beans and water. Bring to a boil. Than lower the heat and simmer for 1 hour or until beans are tender.
Add sofrito and simmer for another 15 minutes Add salt and pepper Drain and serve.

Sofrito
3 tablespoons olive oil
2 green bell peppers seeded deveined and cut into 1/2 inch dice
1 red bell pepper seeded deveined 1/2 inch dice
1 1/2 onions cut 1/2 inch dice
2 tomatoes coursly chopped
2 tspns dried oregano
1 tspn ground cumin
2 tablespoons minced garlic
1/2 bunch chopped parsely(stemmed and minced)
1/4 cup vinegar
1/2 driy white wine

Ina very large heavy 12 inch skillet over high heat heat the olive oil and saute the peppers and onions for 3to 4 minutes. Reduce the heat to low and add the remaining ingredients and simmer for 4 to 5 minutes or until the veggies are tender.

This is a great recipe and it will keep in the fridge for up to 3 weeks!!! Good Luck and Bon appetite!!

chicken base

s&p
bell peppers

throw all ingredients into pot add water until covered. Cook for two to three hours. A crock pot probably would be best. Once done if able blend or puree. If prefer whole bean soup instead of puree the add more water than expected. Make sure you cook on low for better results.

I really like this recipe for black bean soup!

Black Bean Soup:

•1 pound dried black beans
•1/4 cup olive oil
•1/4 pound bacon
•1/4 pound diced ham
•4 onions, chopped
•4 garlic cloves, minced
•3 stalks celery including leaves, chopped
•1-1/2 cups uncooked brown rice
•1 teaspoon cayenne pepper
•2 teaspoons ground cumin
•3 quarts chicken broth
•1/4 cup dry white wine
•1/2 cup dry sherry
Wash black beans, cover with water and allow to soak overnight; rinse; drain; set aside.
Pour oil into a large soup pot. Add the bacon, ham, onion, garlic and celery. Cook at high simmer until vegetables are soft, about 30 minutes. Add beans, rice, seasonings, and broth to soup pot. Bring to a boil; reduce heat, cover and simmer 2-1/2 to 3 hours.
Let soup cool; put through the blender a little at a time, until smooth. Return to soup pot; reheat on low about 45 minutes, adding wine and sherry. Serve hot.

Take a can of black beans and corn--open and drain then rinse.Now put them in a bowl add some diced bell pepper,green onions(or purple)diced tomatoes and a pinch of salt.Pour som raspberry vinaigrette over and chill.Wonderful salad and you can dip it with tortilla chips..Also add black beans to chili for a real different flavor...

I add black beans to my taco salad.

I like to make cheese and black bean quesadilla's and dip them in sour cream.

Look up Tommy's Rice and Beans on epicurious. I love that stuff. And it's healthy!
