Physiology and Ev. science both have biology basis & interesting science subjects.
Physiology refers to the parts & fuctioning of the organs ,tissues & cells.
The re are branches like animal physiology & human physiology.
Ev. science is the in thing at present. the whole world is focused at global warming, pollution of air, water, conservation of natural resources,reduce, recycling,&.reuse
effects of deforestation & afforestation programs.
one should have the right attitude & aptitude towards a particular field & work with total determination & devotion. Then even the tough or a drab subject will become interesting

Both are good fields.
It would depend on what kinds of things do you like to do. If you love the environment and want to protect it, then environmental science is a good field.
However, if you are interested in how organisms' functions from small cells to whole body, then physiology would be the good field.
I think physiology is interesting, its my favorite subject. I like to learn about human physiology as well as other animals. Not plants though.
There are three different types of physiology: Human physiology, Animal physiology and Plant physiology. So depend on what you want to study human, animal or plant. You can choose one as your main field.

There are many jobs in environmental science. There will be more as everyone realizes the need to conserve the environment.

Environmental science has so many different aspects, branches, and possibilities. It's a growing field.
