Mashed - gorgeous with lots of gravy.
Baked - topped with cheese, tuna mayonnaise or coleslaw.
Boiled - best with fish and parsley sauce.
Roasted - good old roast dinner!
Fried - chippy shop ones as a treat!
Cut into wedges - goes with anything.

I have recently re-discovered ROSTI or Roesti as the Swiss would say. Just grate, fairly coarsly, your potatoes - no need to peel or to pre-boil. Just rinse the grated spuds with a little water to take some of the starch away, (this helps stop stodginess), dry with a paper or cotton towel, and fry in some lubricant of some kind - oil, butter, margarine, dripping - whatever. The trick is to make sure it is well cooked, ie stir occasionally in the first stage of frying, and then flip at least once. I like to cook it until nice and crispy on the outside and not too stodgy on the inside.

Tho I do like Fried Chicken, Turnip Greens and Mash with Corn bread...Hmmmm!

absolute favorite is mashed with butter, sour cream, bacon, chives, and cheese in it. Kinda like a loaded baked potato with out the skin and much easier to just eat off your plate.

My favorite way to eat a potato is in baked potato soup, but that's rather wintry. For summer, cut thin slices of potato and put them on a baking sheet in the oven at 400 degrees for several minutes. Continuously check them. You can cook them to your preference. I like mine a little chewy but they can be crunchy, too. Either way you have homemade potato chips. Just add salt and whatever seasoning you prefer.
