Yes buy cheese in bulk and freeze it in smaller freezer bags. Just thaw it in the fridge a day or two before you want to use it. The grated can be used frozen if you need it for something like a casserole, or baking of some kind.

As long as it's shredded first, it'll freeze just fine. I've had problems with consistency when freezing blocks. And squeeze all the air out of the ziplock before tossing it in the freezer.

Biggest mistake in putting food in the fridge or freezer is not getting the air out. Cover in plastic wrap tightly and then insert in freezer bag and get the air out before you seal it. Cheeze will freeze if properly prepared.

It will freeze well if you put it in a air tight container or in a sealed container where no air will get to it. But when you open the package it in and you put it in the freezer make sure you put it in a container and get all the air out.
