I want to make a frankfurter, what spices do i need to use to make it. (The formula/Recipe?)

1/4 lb noodles, cooked and drained
3/4 cup grated cheese
1 tablespoon flour
1 pinch salt
1/2 cup milk
2 tablespoons melted butter
1/2 lb frankfurters, sliced
2 tablespoons brown sugar
2 tablespoons Miracle Whip
1 teaspoon mustard

< 60 mins Main Dish
Combine cheese, flour, and salt.
Stir this mixture, along with the milk and butter into the noodles.
Pour the noodle mixture into a buttered shallow pan.
Combine the sliced frankfurters with the brown sugar, miracle whip and mustard.
Spoon evenly over top of the noodles.
Bake at 375*F for 20 minutes.
Recipe can be doubled very successfully.

Ok, to make your own frankfurters you need to figure out a few things, such as:

1. All beef? All pork? A combination of both? Chicken or Turkey?
2. What kind of casings will you be using and where will you obtain them?
3. How much of your meat product will you need?
4. Where will you store them?
5. Do you have a grinder with an extruder attachement for sausage making?

When you've answered that then here are some of your choices for spices:

1. Garlic powder or fresh minced garlic
2. Onion puree
3. Paprika
4. Lots and lots of salt
5. Pepper and red pepper flakes
6. Smokey flavoring
7. Celery salt
8. Thyme (if you use chicken especially)

Season to taste. And, look on the packages of your favorite franks to get a list of what they put in them. You'll be surprised to notice how many chemicals are used to make them taste like the real deal. Stick to a product like Nathan's or Hebrew Kosher.
