whichever camera has the highest ISO, different mode settings like a night portrait mode, and image stabilization is a big helper if you don't use tripods.
Canon cameras are usually awsome cameras, but the Fuji S5600 has a max of ISO 1600 and takes decent pictures (only 5MP though). Look at these pictures and let your eyes be the judge.

Here's a chart of your camera choices. Be aware that the IXUS 60 is discontinued in the USA, although you might still find it easily in the UK. It has been replaced by the IXUS 70, which is also known as the SD1000. Note that the chart is incorrect when it says that the IXUS 70 does not have an optical viewfinder, because it does. You can see it in the photo and you can verify this at http://www.usa.canon.com/consumer/controller?act=ModelDetailAct&fcategoryid=145&modelid=14901
The fact that this camera does have an optical viewfinder gives it MY vote for the best choice among your group. You can also click on "Read owners opinions" under each camera and see what other folks have to say.
Add'l note: The Fujifilm S5600 is shown on this chart as the S5200.
OPTICAL VIEWFINDERS
I lament the passing of the optical viewfinder and I would choose almost any camera with an optical viewfinder over one that only has an LCD viewfinder. Why?
1. You never have the option of turning off the LCD and these things eat batteries for lunch and spit them out. Why do away with the option of a viewfinder that has zero electrical drain?
2. It can be difficult to see the image on an LCD in bright sunlight, even if they are "new and improved."
3. You have to hold an LCD viewer out at some distance in front of your face. This is more conspicuous than I prefer to be all the time.
4. The need to hold a camera at arms length will introduce some shake. I like the idea of stabilizing a camera against my face when I am taking a picture. This is especially important with a longer zoom lens. No wonder "image stablization" or "vibration reduction" is necessary with these cameras. Not that there's anything WRONG with IS or VR, but it is really a requirement with LCD viewfinders and telephoto lenses.
5. Using the LCD to view photos after you've taken them slows down the camera quite a bit. You can't shut of the LCD monitor and still take pictures if you don't have an optical viewfinder.

All these cameras are ok, battery life was an issue for me when I bought my latest camera. I have a lumicron ldc-825z3, 8.0 mega pixels, 3x optical zoom,24x digital zoom. It comes with a rechargeable 3.7v lithium battery.
It was a bargain at £129
Try to get a camera with similar spec and you wont go far wrong.

i have a canon power shot A620 with7.1 mp and 4x optical zoom
the screen also pops out and you can turn it around to take pics of yourself and a buddy
it was around 200$
it takes video and it runs on batteries
the pictures come out GREAT and it has red eye reducer
the night shots and the video are of really good quality
if you dont like that one, ive heard that canons and samsungs are good cameras to start out with
the canon you picked out sounds like it would be fine for your needs
