The pigment in beets is VERY strong (traditionally used as a dye as well) and can not be broken down by your body. Other food will have this effect if you eat enough of it. Carrots can have the same effect.
Eat enough carrots or beats and the palms of your hands and bottoms of your feet can turn colour.
If you go to the hospital with suspected bleeding bowels one of the first questions is "have you eaten a lot of blueberries or beets".
Blues and purples are shown easily in "waste", likely because it is unlike any colour normally produced by your body that it shows up well.

The colour of red beetroot is due to a purple pigment betacyanin and a yellow pigment betaxanthin known collectively as betalins, unlike red cabbage which contains the pigment anthocyanin. Breeds of beetroot which are not the typical deep red, such as 'Burpee's Golden' and 'Albina Vereduna', have a greater or lesser distribution of the two betalin pigments.[11]#
Betacyanin in beetroot may cause red urine and feces in some people who are unable to break it down.
The pigments are contained in cell vacuoles. Beetroot cells are quite unstable and will 'leak' when cut, heated, or when in contact with air or sunlight. This is why red beetroots leave a purple stain. Leaving the skin on when cooking, however, will maintain the integrity of the cells and therefore minimise leakage.

I never heard of urine turning red though I've heard of poo turning red. Especially if you have Harvard Beets.
Oh by the way, blueberries will make your poo a greenish color.
