Beef tips and gravy over rice.
Brown them in skillet with a little oil.
Then add just enough water to cover bottom of
skillet. Put a lid on it and cook until tender.
Or after browing them you can put them in crock pot
add a little water and cook on high for about four hours.
Add a package or jar of brown gravy mix, Heat until hot.
Serve over cooked rive or noodles.

Beef stew meat is usually from the chuck area. It more tougher then other cuts. Thus the best way to cook it would be any moist method ie soup, stew or anything that cooks the meat in liquid of some sort. The reason is the moisture will keep the meat from drying out and thus allows you to cook it for longer time. Usually it takes 2 hours or so to make it nice and tender.

I guess it depends on what you feel like eating, and what cut of meat it is.
If you're looking for something lighter and summery, you can marinate it in a vinegar based marinate that will break down the connective tissues and make it very tender for grilling or stir frying. Look into recipes that utilize the cut of meat in a different fashion, some ethnic recipes or european type stews can use the same type of cooking, but differ in ingredients to make it much more interesting.
Personally, I would go with rice vinegar, ponzu sauce, sesame oil and some red curry paste as a marinade.
Slice the beef against the grain into strips, marinate in the above mixture and put onto bamboo skewers. (Soak them in water first) Grill and Baste!! Done!!
I hate beef stew, so I will find any way to make it into something else!

NO PEEK STEW MEAT CASSEROLE
1 pkg. stew meat
1 can mushroom soup
1 pkg. onion soup mix
1 can mushroom & liquid
1 c. ginger ale
1/4 c. wine, cooking
Mix together and bake at 325 degrees for 3 hours. Serve over noodles or rice.

I have a variation of Beef Stroganaff (the spelling is wrong I think)
Take a lb. of stewing beef and toss it with flour, salt, pepper. garlic powder, and rosemary in a big Ziploc until coated......throw it in a heavy bottomed stew pot that has hot olive oil in it .....along with a diced onion(i like a large onion) until beef is brown on all sides add 1/4 cup of Worcestershire sauce and stir then add 2 cups of a heavy red wine , like port, turn down the heat and simmer until beef gets tender(or put in crock pot)..........right before you are ready to serve stir in a cup of sour cream..................serve over hot noodles............with a side of veggie..........I like a broccoli cauliflour mix............Bon Apetit

STEW MEAT ITALIAN
3 lbs. stew meat
1 (8 oz.) bottle Italian salad dressing
1 (4 oz.) can mushrooms, sliced
Salt and pepper to taste
Garlic salt to taste
Place stew meat with salt, pepper and garlic salt in container with salad dressing over top. Place cover on container. Let set for 4-6 hours in refrigerator.
Remove meat from container and place in pan to brown; stir slowly on medium-high heat. Pour juice from pan back into container. Stir remaining dressing and juice back over meat. Put mushrooms on top of browned meat and stir slowly. After meat is done to your desire, remove from stove and cover; let meat contain juice 10-15 minutes.

2 cans cream of mushroom soup
1 pkg. Lipton onion soup mix
Season salt
White rice
Peas
Cut stew meat in bite size pieces. Put into 1 1/2 quart casserole dish. Season meat with season salt. Add soup and Lipton onion mix to meat. Bake at 350 degrees for 2 to 2 1/2 hours. Do not check on until 2 hours are up. Serve with white rice and peas.
