Have you tried shepherd's pie? Just ground the beef, add salt or pepper to taste. Put on the bottom of a pan. Top with mashed potatoes and then shredded cheese. You just broil it until the cheese is melted. I usually add onions, peas and corn to the beef mixture but you can leave them out. Simple but good.
Also maybe try Football Casserole. Spray bottom of pan with nonstick spray. Layer with tator tots. Brown ground beef, then add a cream of soup to it (I usually use Cream of mushroom but you could use cream of chicken, cream of celery, etc.) and one can of milk. Pour over tator tots. Then top with shredded cheese. Cover and bake at 400 for 30 minutes. I like to add onions and black beans to the meat before cooking and top it off with salsa and sour cream after its cooked- but only when I'm feeling really crazy...
Good luck with that man!

Here is one I know you will all enjoy. If you decide to do this, don't get the regular biscuits get the flaky ones. Beef and Cheese Bake 1 ½ pounds ground beef ½ cup chopped onion 1 8-ounce package cream cheese, softened ¼ cup milk 1 10 1/2 –ounce can condensed cream of mushroom soup 1/3 cup ripe olives, sliced ¼ cup catsup 1 tsp salt 1 package refrigerated biscuits (10 biscuits) Brown ground beef and onion in skillet. Meanwhile, blend cream cheese and milk together. Stir in soup, olives, catsup, and salt. Combine with meat and onion in 2-quart casserole. Bake at 375 for 30 minutes. Arrange biscuits on top and bake 15 minutes longer, or till biscuits are browned. Serves 6

If he will eat beans then try this casserole:
1 lb of ground beef
1 large can of Ranch Style beans
2 cups of cheddar cheese
tortilla chips - crushed
Brown your beef and add the beans.
In a casserole dish add a layer of crushed tortilla chips, then put a layer of the beef/bean mixture and then put cheese on it. Do another layer the same. Make sure you cover the top with cheese. Bake in the oven at 350 for 25 minutes or until the cheese is done. I also use a can of Campbells cheddar soup but you said he was picky so I wasn't sure if you could use it or not. I serve with spanish rice and a salad.
My picky husband loves this.

Shepherd's Pie
1 or 1-1/2 lbs ground chuck/hamburger
1 qt (3 cans) green beans, drained
1 can mushroom soup
2 C leftover mashed potatoes (or instant)
Brown the hamburger & drain. Mix green beans & mushroom soup together. Layer in a casserole dish the hamburger, then the green beans/mushroom soup & top w/the mashed potatoes. Add a pat of butter on top & bake @ 350 for 35-40 minutes.

Oh my goodness---either you and I are seeing the same guy or our bfs are eerily similar. The only veggie my guy will eat is green beans too! He even complains if I make them fresh instead of canned because they are"too hard"---it drives me nuts! Since I don't eat red meat, we compromise; I've got him eating groud turkey instead of ground beef most of the time. His favorite is baked pasta. I boil a box of any shape pasta, rigatoni is good(boil one minute below the cooking time on the box). In a seperate skillet, I brown turkey sausage with the casing removed (you can use pork sausage instead OR plain ground turkey or ground beef). Add any seasonings that he'll tolerate (I usually toss in some red pepper flakes and italian seasoning) and a jar of your favorite marinara sauce. My guy will only eat Prego---you can use whatever or even homemade. Add about 1/2 cup of water to thin out the sauce a bit. Spread a thin layer of the sauce on the bottom of a baking dish. Pour in the cooked pasta and cover with the remaining sauce. Sprinkle whatever type of cheese that he will eat over the top (I use parmesean and mozzerella). Bake at 375 for about 20 minutes or until brown and bubbly. My guy would eat this every day if I let him. Fix a salad for yourself to go with it (clearly our guys aren't salad eaters).
I make fruit salad alot so that he gets some nutrients. Long story short: I feel your pain!
Good luck!

Make a taco inspired pasta. I do it all the time. I make my pasta usually elbow style I cook the ground beef and use taco seasoning. Mix the pasta and ground beef then add what ever ingrediants he does like.
You could make taco burgers, it doesn't sound like you have many options, but I would try these out on him.

A quick one is Shepherd's Pie (an altered version of course because of your dear's pickiness!)
Cook ground beef, combine green beans, and cream of mushroom soup. Spread in bottom of 9x13 pan and top with mashed potatoes and cheese and bake!
Here's the real recipe though:
**Ground beef and onion are sauted until golden, and then combined with corn, green beans and canned gravy. This hearty filling is then spread in the bottom of a 9x13-inch casserole, topped with mashed potatoes and cheese, and baked.

I feel your pain. My husband just HAS to have red meat all the time. So tonight is Manwich night. I don't know if there's too many onions in there for him.
I usually have pasta or a salad or rice. It's supposed to be a side dish, but it's my main meal.

The Frito boat idea from Joycee is an excellent one! We just had that here the other night. You can also do basically the same dish with dorettos. Minus the onion for Mr. picky. lol Good luck.

Good grief, you've got a challenge on your hands.
*Pasta and meat sauce
*Meatballs (with or without sauce) and veggies
*Shepherd's pie (ground beef, corn, gravy, mashed potatos, topped with cheese)
*Enchiladas
*Sloppy Joes
And do a search online for ground beef recipies
