I would make an enchilada pie. It's sorta like the stacked enchilada that gets served in some restaurants.
In the bottom of a round oven safe pan, place a layer of tortillas. On top of that put ground beef or chicken or pork or whatever you like. I like ground beef with taco mix, but whatever works for you. (Whatever filling you use should be cooked already.) Cover with cheese, and if you have a good enchilada sauce pour that on as well. Can substitute good salsa if you would rather.
Now place another layer of tortillas on top of that and repeat.
Pop it in the oven at 350 or so and cook until cheese on top starts to brown a little.
Or you can try tortilla soup.

I like to take my leftover flour tortillas and cut each one into 8 wedges and place them on a baking sheet that has been sprayed with Pam and bake them in the oven until I get the desired crispiness I am looking for. I then like to dip them in quaeso dip. Here is the recipe. It is so yummy and so simple. Hope this helps! :)
Queso Dip
1 pk Cream cheese
1 cn Chili
2 c Monterey jack cheese; shredded
Cut up cream cheese into small chunks and arrange on bottom of pie plate.
Top with canned chili and then shredded cheese. Cook in microwave oven
until heated through Serve with tortilla chips

Cut the tortillas into triangles or strips and deep fry them until they are lightly brown.
Have some cinnamon sugar ready in a shaker and coat the strips with the cinnamon sugar.
The sugar caramelizes and makes a nice sweet chip.
They're quite addicting and I'm not much of a sweets eater.

layer tortilla strips, sliced, cooked chicken, some cream of mushroom soup and salsa in a cassarolle dish so you have at least 3 layers, chix mix on top. bake until hot all the way through, top with more cheese.

cut the tortillas into triangles..fry them in oil(like making chips) once all are fried..put them back in the pan and add tomatoe or enchillada sauce.combine it with cheese..cover and let it melt...add salt to your taste...top with sliced onion,salsa,avocado and sour cream....
you can even add shreaded chicken and buy green enchillada sauce...

Quesadillas! Just stick some cheese between two tortillas and fry it up. One of my favorite meals, it's super quick, and you can put anything in it. Chicken, broccoli, onions, whatever you can find. =)
