im having my daughters baptism and a scheduled it on Monday and its on Sunday and i need quick and easy food ideas for the party afterwards.

You said potluck......to me, that means everyone brings a dish. Casserole dishes usually work best for potlucks.

Here's one that is always a hit

Chicken Asparagus Casserole

1 boiled or baked chicken...deboned and chopped to bite size pieces
2-3 pounds of asparagus...steamed tender
2 cans of Cream of Asparagus soup
2 cups of shredded white cheddar cheese
6-8 slices of white bread, (without crusts)

Butter or spray (with Pam) a 9 X 13 glass baking dish and line the asparagus spears up side by side until bottom is covered. Spread a can of Cream of Asparagus soup over that. Sprinkle half of cheese over that evenly.
Next layer on chicken evenly and cover with other can of soup. Sprinkle rest of cheese over the top.
Now cut each bread slice in thirds and lay the bread over the top for a crust.
Bake in preheated 350º oven for about 30 minutes or until cheese is melted and bread is golden.
Serves 6-8 depending on appetite.

(I usually add another layer of asparagus after the chicken along with another can of soup and anothe cup of cheese 'cause my family loves asparagus. You can use the frozen asparagus but the fresh is best.)

OR:
Honey Stir Fry Chicken

1 pound skinless,boneless chicken breast, cut into 1 inch pieces.
1 garlic clove, minced
3tsp. olive oil (divided)
3 tbs. honey
2tbs. soy sauce
1/8 tsp. salt
1/8 tsp. pepper
1 (16oz.) package frozen stir fry vegetables
2tsp. cornstarch
1tbs. cold water
Hot cooked rice

In a large skillet, stir fry chicken and garlic in 2 tsp. oil. Add the honey, soy sauce, pepper, and salt. Cook and stir until chicken is lightly browned. Remove and keep warm.
In the same pan, stir fry veggies for 4-5 min or until heated through. Return chicken to pan, mix well. Combine corn starch and cold water until smooth, stir into chicken mixture. Bring to a boil, cook and stir for 1 mintue or until thickened. Serve over hot rice.

Well, for the pot luck I would expect other people to bring a good amount of food, but it'll probably be mostly appetizers, sides, and desserts. When hosting a pot luck, then, I would prepare a main course. BBQ chicken will probably be popular and compliment whatever guests bring.

When we host a potluck, we always have the sandwhich bar. Over size dinner rolls, deli sliced ham, turkey, roastbeef with a deli sliced cheese plate, shreeded lettece and sliced tomato and mayo musterd and butter. everyone else brings alot of appitizers, beans, crockpot entrees and stuff.

Just found out great tortilla dip recipe actually tried it last night, to die for. one package of cream cheese and one can of no bean chili heat mix serve warm with some chips.
