These are some popular white cheeses in mexican food. I think most white cheese in mexican joints is one of these. Queso blanco is really good just by itself.

• Queso blanco: This creamy white cheese is made from skimmed cow's milk. When it is heated, it becomes soft and creamy but doesn't melt. It is ideal for stuffing burritos and enchiladas. advertisement

• Queso panela: This soft white cheese often is served as part of an appetizer or snack tray. It absorbs other flavors easily. Like queso blanco, it doesn't melt.

• Queso fresco: Usually made from a combination of cow's milk and goat's milk, it tastes like a mild feta cheese. It crumbles easily and tastes good in salads or with beans.

• Queso oaxaca: Also known as quesillo, this soft, mild cheese is perfect for quesadillas. It is similar in texture to string cheese, and should be pulled apart into thin strings before being put on the tortilla.

• Queso cotija: Sharp, firm and good for grating. Simply sprinkle it on top of beans, chili or other dishes to enhance their flavor.

Queso Blanco- very similar to Monterrey Jack or Mozzarella in flavor
Queso Fresco- crumbles easily
Panela- crumbles very easily and has a slightly salty flavor
Requesón- a very soft texture similar to Italian ricotta cheese

Queso Fresco. I believe its a mexican white cheese - semi soft, Ive seen it in the supermarket. If you are referring to the cheese they sprinkle looks like parmasean its called Cotija

I believe who ever said Queso Fresco was correct, it is a goat cheese, or a mix of cow and goat milk. The local restaurants use it here, too, and it is good!!

Is it like a moist crumbling cheese? It could be queso fresco. If it's a melted cheese like on enchiladas, etc, it could be queso oaxaca.

usually queso fresco, or a kind of cheese called 'farmer's cheese,' which is like mozarella but milder tasting...and its consistency is creamy which makes it nicer for melting...but you can get it in lots of grocery stores and it's actually really good un-melted. the consistency is a bit like fresh mozarelly...nice with grilled vegetables.

It's most likely queso ranchero, but they also use cotijo and monterray jack. casique is a brand that makes queso ranchero.. MMMMM....CHEESE!!!
