If your mom-in-law eats absolutely no carbs, that's going to limit her food choices, so I'd recommend that you consider planning a great meal that is balanced in all areas, and include a 0-carb dish or two. And, by the way, you can make corn on the cob and then let him slice it off if he wants to! (where's the polygrip when you need it!). Here are some ideas:
1. Grilled pork steak, fresh green beans, mashed potatoes, chopped salad (cauliflower, carrots, celery, mushrooms, romaine) with blue cheese dressing, fresh fruit parfaits for dessert (check out Breyers Low Carb Ice Cream)
2. Grilled pork steak, spinach salad with mandarin oranges, feta cheese, walnuts and bacon with french dressing, hot french bread with butter, and angel food cake with fresh strawberries for dessert (you can often find sugar free angel food cake)
3. Baked pork steak with mushroom gravey, baked potato casserole, glazed carrots, romaine lettuce with shaved parmesan, fresh beets, and radishes with feta or gorgonzola cheese and Italian dressing, ice cream sundaes (sugar and carb free)

Make a basic green salad. Don't use those bagged salad mixes. Get a good head of lettuce (iceberg is the best) and chop it up. Cut up cucumbers and tomatoes (I dice them up) throw 'em in there. Sometimes I'll add little cubes of Pepper Jack cheese in there for some "zip" to it. Also, I really like seasoned croutons, they'll add some nice flavor too. Have a couple of basic dressings...one a light one (usually ranch is a good one and a vinagrette - balsamic is a good one). Pork Chops are a good main dish with this. Since the diabetic, no-carbs thing...the starch in the meal has to be minimal (diabetics can't each many carbs either, processes into sugars). However, I would still over baked potatoes of various sizes with butter, sour cream, bacon bits, and grated cheese and bacon bits as additives. This way they can choose to either have or not have one and what to put on it. They are alot healthier than mashed potatoes or alot of other starch dishes. I'd have a side dish of various pickles. I think that would be a great meal. Very basic, but it keeps them healthy.

Frittata. Vegetarian.
Thaw or boil 1lb frozen veges, and allow to drain and cool.
Place in a range top to oven dish. Must be shallow.
Whisk together 6 medium eggs and pour over veges and cook on med low heat until the eggs are beginning to set and the transfer to oven and place under a medium hot grill, until the eggs are set and the brown.
Eggs have so little carbs it shouldn't matter. (.3g per 100g)
BTW I have dentures and I can eat corn cobs If he can get stuck into a steak I dare say he can eat them.
Wouldn't suggest you try it until you know him better or just put some out in a bowl to see what he will do. You never know he may try one.

Pork steak, green beans or asparagus cooked in chicken broth, glazed carrots (glazed with Splenda/Equal & I Can't Believe It's Butter) and brown rice (for your father-in-law).
The salad can be Spinach, Romaine hearts, cherry tomatoes, cuccumbers, shredded radish and perhaps olives with a great low fat Balsamic Viniagrette or light Italian dressing.
Dessert can be either jello w/fruit, fruit & yogurt parfait (using Splenda/Equal instead of sugar).

You can make a veggie bag with asparagus, squash, broccoli some olive oil and your seasoning in a pouch made from tin foil and either bake it in the oven and on the grill to roast the veggies. The taste is amazing, the vegetables will be soft, and there is no baking dish or anything to have to wash afterwards.

just be yourself, polite but don't get nervous if you are close with them, serve the mother-in-law first then the father-in-law

pork is really good dipped in/served with apple sauce. you could make a fun rendition of it then its something they'll probably like and it tastes awesome.
