You can buy "quesadilla" cheese at most grocery stores, and it tastes very close to me, but I don't know whether it's the same as what is typically used.

The cheese you are probably referring to is a "melting cheese" used by restaurants for us gringos who won't eat real mexican cheese. You can find it at the grocery store. It's a mixture of white american and milk.

We use queso cotija o añejo. Well we actually have lots of cheeses: Queso Blanco- very similar to Monterrey Jack or Mozzarella in flavor,
Queso Fresco- crumbles easily ,
Panela- crumbles very easily and has a slightly salty flavor ,
Requesón- a very soft texture similar to Italian ricotta cheese.
You can go to any supermarket with latin products and practice yor spanish.

I find that manchego tastes a lot like Monterey Jack. I love the stuff.
