You could pack a wrap sandwich on a tortilla of hummus and and any raw veggies that he likes. If hummus is out and he eats dairy, try and herbed or plain cream cheese.

Hello,
If this camp serves lunches, you can request vegetarian food. I worked all last summer at a camp, and the only time I got to eat lunch was when vegetarian kids came. Apparently I wasn't important enough to feed.
:)
Mind you, it would probably be a cheese sandwich, but it is still food. And many of the other kids end up wanting that selection as well.
Sometimes I would order a pizza and take a couple of slices each day... I tried not to do that too often because all the kids would be jealous of me.
Other times I would make fake lunchmeat sandwiches... oddly, I was really fond of bologna and catsup. :)
Another good sandwich is humus and veggies
Granola bars are always good
You could treat your kid to a packed Subway sandwich

Spread some vegetarian refried beans on a soft tortilla and roll it up. I like to pack a couple of these when I'm travelling. They're super simple, don't need to be refrigerated and won't drip on him either. You can add some mild salsa or something to the beans as long as they don't get too watery, or some cheese, whatever he likes. Pack some carrot sticks or chips on the side, and he's good to go!

are you vegan?
if not, some cheese cubes are always good...might I also suggest some hummus and pita chips ( you can make these by cutting up a pita and baking in the oven for about 10 minutes), you may want to check if sesame is restricted as well...
how about a pita pouch with veggies and a bit of balsamic dressing
carrot and celery sticks are always big...can also dip in the hummus
apple, banana or any other portable fruit...
box of raisins or other dried fruit in a little container
yogurt...maybe some Kashi or similar cereal to sprinkle on top...
an organic juice box or pouch

Substitute the ham with something else like grated carrot. Or for that matter substitute any thing, but here is an idea out of my recipe book.
Club Sandwiches.
Take four slices of bread and spread them with butter or margarine.
On the first slice place ham and some mustard. (Optional)
Place the second slice of bread on top of Ham, and cover with mashed egg, seasoned with S&P.
Place the third slice of bread on top of egg, and cover with de seeded tomato, seasoned with S&P
Top with forth slice of bread, spread side down.
Cut crusts fro the sides and cut into fingers.
If possible get a loaf of caterers sliced bread.
It is cut lengthways, instead of across, so you can make several at a time.

Try a lunchbox pasta salad - it will be filling and healthy and makes a change to a sandwich.
The recipe I use uses:
2 cups uncooked rotelle (wagon wheels) or small shells
2 cups small broccoli florets
1 large carrot, sliced
1/2 cup pitted black olives, halved
1/2 cup cooked corn kernels or cut baby corn
1/3 to 1/2 cup natural low-fat dressing or your choice, as needed
Salt to taste
Cook the pasta in plenty of rapidly simmering water, according to package directions. Just as the pasta becomes al dente, add the broccoli and carrot to the simmering water and allow to cook for another minute or two, just until the broccoli turns bright green.
Drain and rinse under cold running water until the mixture cools. Drain well and combine in a mixing bowl with the olives, corn, and dressing. Season to taste with salt.
If you make this the night before, taste and add more dressing if needed before packing into containers.
Using small pasta shapes makes this pasta salad easy to pack into small containers or shallow thermoses. Feel free to substitute other vegetables that your kids might enjoy—such as green peas instead of broccoli. I like to make this the evening before I plan to send it for lunch. We serve some with dinner, then save enough to pack for lunch the next day.

For mains, hummus sandwiches are good. Also Boca chick'n nuggets with ketchup. Beans and rice is another good option.
Side items can include fresh fruit, fresh veggies with dip, cheese sticks, hard-boiled eggs, tortilla chips with salsa, etc.

How about a mexican rice wrap? Just take some spanish rice, shredded lettuce, tomato and sprouts, and roll it up in a rice or flour tortilla. You could also do a pasta salad, rice salad, or taboulleh. Serve with pita bread. Pita breads stuffed with veggies and sprouts, and topped with Italian or ranch dressing are good too. My 12 year old veggie daughter likes those. Most days, I pack her a hot thermos lunch, but on hot days she likes to keep it light and cool. She also likes a tomato half, hollowed out, and stuffed with veggies, sprouts, breadcrumbs and ranch or russian dressing. She also likes chopped mixed veggies rolled up in lettuce leaves like a wrap.
