Besides the usual beans and rice and enchiliadas. Any input would be helpful.

Take soft cream cheese and mix in a packet of taco seasoning. Spread on a flour tortilla and then roll the tortilla into a tube. Cut into about 3/4" to 1" pieces and you have tortilla wraps with a kick!

Also, a Taco/Nacho bar. Just put out some fresh flour tortillas, some crispy taco shells and lots of tortilla chips. Have a bowl of ground seasoned beef and another one of shredded chicken. Then have bowl with lettuce, tomato, onion, shredded cheese, melted cheese sauce (for the nachos), refried beans, jalapeno, sour cream and hot sauce. That should be easy enough. Clean up won't be a problem and you should have everyone covered for food.

Mexican Mashed Potatoes With Green Chiles

1 lb russet potatoes, peeled and cut into 1/2 inch chunks
2 tablespoons butter or margarine
2 ounces canned diced green chilies
1/2 cup shredded cheddar cheese
1 tablespoon cilantro, chopped
1/8 teaspoon salt
1/4 cup skim milk

Boil potatoes in salted water until tender. Drain.
Transfer potatoes to a bowl and mash.
Mix in remaining ingredients.
Season to taste with salt.
If needed, add in a little more milk.
Feel free to adjust the cheese and cilantro level to your liking!

Here is a easy and tasty recipe.........Take one package of Jimmy Dean sausage and fry it, while its cooking make sure and crumble the meat so it's in small chunks. Then in a crock pot add 1 package of Veelveta cheese and add 1/4 cup of milk then add the cooked sausage. cook until the cheese is melted, about an hour, then take it to the party with a couple of bags of tortilla chips. To spice it up a bit you can add 2 cans of mild Rotel, drained. Hope this helps.

easy appetizer- large block of cream cheese softened mixed with a splash of milk and 1 pkg/envelope of taco seasoning mix. Make into a ball and press down into a wheel on a flate dish.

Use chopped scallions, sliced black olives and chopped tomatoes. Place in concentric circles on the cheese wheel.

Serve with crackers.

You could make some rice and beans, Taco's, um Beef, um haha stuff like that i guess.

You can bring sopes, tacos dorados, quesadias,and for side dishes for example guacamole . You can also take jello from mexico.

Corn beef and cabbage with lots of potatoes / onions with sour dough bread.
Some people get tired of hot chili or heII fire ribs and wings..
