***HERE'S MY EDIT:
How about a Cornish Hen dinner? Tell you what, this may sound weird but really is tasty.... cut an orange in half and put up inside of bird. Keeps it really moist. Try to separate skin from body and put a mixture of butter and chives. Spread around evenly. Last but not least, baste bird as it cooks with an Italian dressing.
Yummm!! Makes for very moist meat and all the seasonings of the butter mixture and dressing gives it just what it needs.
Some sides to serve: Salad, Rolls, Steamed Carrots, and Red Skin Potatoes.
This is a delicious meal and covers all the food groups. Plenty of veggies too which are healthy for you with not a lot on the carbs side! ***

Here's one I found in Taste of Home, I made and it looked very impressive but it was very easy, and inexpensive.
Hungarian Chicken Paprikash
1 large onion, sliced
1/4 cup butter, cubed
2 tbsp. paprika
1 tsp salt
1/2 tsp pepper
1 1/2 cups water
2 tbsp. cornstarch
2 tbsp. cold water
1 cup sour cream
In a large skillet, saute onion in butter until tender. Sprinkle chicken (use however many pieces needed for however many are invited) with paprika, salt and pepper and place in an ungreased roasting pan (I used a glass 9x13). Spoon onions over the chicken and add hot water. Cover and bake at 350 for 1 1/2 hours, until chicken is done. Remove the chicken and keep warm. In a small saucepan,combine cornstarch with cold water, whisk until smooth and pour in pan juices with onion. Bring to a boil over medium heat, cook and stir 2 minutes or until thickened. Remove from heat and stir in sour cream. I served the chicken pieces on top of mounds of mashed potatoes, spooning the sauce over the top (the paprika makes the sauce a beautiful rich red color) and for the vegetable I sliced cabbage in long strips, sauteed gently in a tablespoon of butter, some salt and pepper and celery seed. I added 1/2 cup water and covered so that the cabbage would steam and be tender.
If you want it to be lower in fat, remove skin from chicken, it won't affect flavor, use 1/2 butter and 1/2 olive oil and use light sour cream. Good luck.

Make it easy and have a large bowl of pasta, 2 or 3 great sauces, garlic bread and a salad. For those weird "non carb" peeps they can just have a salad with some marinara on the side!!! This idea is great for those of us wanting to have great food yet hang out with the host....

4. Pork chops stuffed with wild rice and sausage, fresh roasted beets with goat cheese, peas, and pecan pie for dessert.
5. Slow cooker beef stew with dumplings, green salad, and hot bread. For dessert, sundaes with chocolate and caramel sauce.
6. Lasagne, green salad, french bread with cheese, and angel food cake with vanilla ice cream and chocolate sauce for dessert.
7. Grilled chateaubriand with baked potato casserole, caesar salad, and lemon creme brulee for dessert
8. Grilled salmon with teriyaki glaze, jasmine rice, spinach salad with candied walnuts and goat cheese, lemon meringue pie for dessert.
9. Grilled pecan crusted halibut steaks with roasted fingerling potatos, fresh green beans with lemon butter, and strawberry parfaits for dessert.
10. Shrimp and Feta Bake (with plum tomatoes and half and half) with hot french bread, baby lettuce salad with radishes and goat cheese with a dijon mustard vinegrette, chocolate lava cake.
