Deli meats and cheeses, salmon, tuna, egg, vegetables, perhaps like a sloppy joe mix, pickles etc will all make nice sandwiches. As for finger food buffet, veggies and dip, fruits, crackers and cheeses, chips, bruschetta, chicken wings, mushroom caps, ribs, quesadillas, sausage rolls, bagels and pastries etc... Many options out there be creative.

You should try a diferent type of sandwich, using Lavash Bread (flat bread). You can use everyday toppings, ham, chesse, chicken, egg, lettuce, tomato etc. Once filled you cut into pinwheel slices and they look spectacualr on the plate, with filling facing up.
Very easy and always a big hit.

Get me started on sandwiches. Even the lowly grilled cheese sandwich can be kicked up. Use sourdough bread 2 slices. Heat butter in a heavy skillet. Butter one side of each slice. Sprinkle buttered side with parmesan Regina. Put first slice of bread buttered side down in hot butter top with cheese - you pick - gruyere, Jarlsberg, Aigo, goat cheese, brie, parmesan Regina. sprinkle with fresh minced herbs - you pick - basil, dill, fennel, sage, parsley, cilantro, oregano, marjoram, thyme. Top with second slice of bread. When first side is toasty turn over and toast second side. If you really want to have fun with sandwiches query gourmet sandwiches on line. I love sandwiches and do some crazy things that are all good. Think outside the loaf. LOL

When I do sandwich buffet i use oversize dinner rolls, deli sliced ham, roastbeef and turkey, a deli sliced cheese plate with monterey, chedder or pepperjack, a plate of shredded lettece and sliced tomatos, and bowls of condiments like mayo and mustard.
Finger foods i have a veggie plate with dip, greenonion wraps (deli ham with creamcheese wrapped around a greenonion), deviled eggs, a crockpot of baked beans and various chips in bowls.

mini BLT's with crispy bacon and guacamole. (yum)
You could always do pin wheel sandwiches. Cut the crusts of the bread and roll it really flat with a rolling pin. Spread the filling on one side and then roll the slice to form a swiss roll kind of effect. then cut slices from this, looks pretty and is different.
