Here's what I do

drain and crumble tofu

put in a non-stick frying pan

add Chicken style seasoning or a vegetarian "poultry" seasoning (McKay's Chicken style seasoning is the best, if you know where to find it. Not too much, cuz it's salty!!)
add a little garlic powder and onion powder
add a dash of soy sauce
And a bit of nutritional yeast if you can find it.
The poultry seasoning and soysauce have quite a bit of salt in them so you shouldn't need to add salt. Also later you'll add salsa, which is salty.

Let tofu simmer for awhile, stirring as necessary.
while it is simmering, dice a bit of tomato (use your own judgment on how much for the amount of tofu)

WHEN TOFU IS ALMOST DONE add the tomato and a bit of salsa (i prefer Original Pace Picante sauce mild) THe reason you have to wait on the tomato products is tomatos sometimes stop things from cooking. So you wanna make sure the tofu is almost cooked before you add them.

put tofu on a warm tortilla with a dab of sour cream (or vegan sour cream) and more salsa if you want.

I call it "Southwest Style Scrambled Tofu"

One of my favorite breakfasts.

One of my favorite things to do with the Fu is make Fegg Salad. Fegg = Fake Egg.

You'll need:
1 tub medium fu
Capers
Turmeric
Nutritional Yeast
Vegennaise

Take your tub of Fu.
Drain well. Nobody likes runny feggs.
Heat a bit of olive oil in a skillet. A low heat. Tofu is already cooked so all you're doing is warming it.
Turmeric is best when it's been cooked. So toss in some turmeric. I use a LOT because I love it. 1 or 2 teaspoons. It's has loads of good stuff in it. Keeps you healthy. Keeps you from getting cancer.
Cook the turmeric in the olive oil for just a bit.
Toss in the fu. Use a spoon or fork or what ever to "crumble" it. Poke poke poke. It will come apart just fine.
Sprinkle a heaping amount of Nutritional Yeast. I use like 2 or 3 tablespoons.

The turmeric will turn your fegg yellow. The nutritional yeast gives it that yolk-like flavor. A richness to it.

It doesn't take long to do this. Then you have to let it completely cool.

Once it's cool, stir in capers and vegennaise just like you would regular egg salad.

Serve on toast. Drop a big scoop on a salad. Eat it with chips.

Yum Yum.

Be sure to drain it well. It helps to put a light weight on it (I use a plate with a can of beans or something on top) to get alot of the moisture out. Cut it up into thin slices or strips and fry it in a pan with a little bit of oil. Tofu absorbs whatever flavors you throw at it, so experiment with different seasonings and spices. I think it's great in stir-fries.

Frying it and putting it in a stir fry is tasty. So is using it in lasagna instead of ricotta. Or start sauteing some onions and (lots of) garlic in olive oil, add some crumbled tofu, herbs, salt, kalamata olives, and a bit of the brine, and toss it with pasta. Yum! I even have a banana bread recipe that calls for it. Try VegWeb for recipe ideas.

i'm chinese and i've been eating tofu ever since i can remember. There are so many good ways of cooking tofu in chinese cooking. if you like chinese food you would want to try "ma po tufo" it has ground meat, tofu and onions. you can make your own sauce with a little bit of oyster sauce and equal part soy sauce, and pinch of sugar. ....( you can probally find the recipe online) or you can buy a can of "Lee Kum Kee - spicy garlic sauce" in any chinese supermarket. It tastes really good! you can even eat tofu dessert! buy the really soft ones and make a syrup with brown sugar and a bit of ginger. or deep fried tofu with salt and pepper ( bell pepper) --- really good as well! good luck
