Westernize has two meanings - 1. To make the dish more acceptable to the western palate (by toning down the strong flavors) or 2. Use whatever ingredients you can find to make a dish that's similar.

Sounds like you're asking about defintion 2.

If you're fortunate enough to live in a city with a large Asian population, you can find the ingredients in your local Asian market or even try Latino markets.

If you're out in the middle of nowhere, then you have to find close approximations of what you have.

Pansit - instead of rice noodles, find thin vermicelli pasta.
Sinigang - instead of Tamarind... use guava juice and vinegar. Latino markets usually have tamarind so you can look for that there.
