The recipe Calls for 1-12 oz pk extra firm tofu cut into 1/2 inch cubes. I can't stand tofu. This is an asian soup recipe and I would really like to find a substitute for the tofu.

This recipe has vegetable broth, carrots, miso, soy, broccoli, snow peas,mushrooms and udon noodles. This was added for the person who asked why I was making this recipe if I didn't care for tofu. I love all the other ingredients in the soup. Just not the tofu, which I know IS healthy. I just can't tolerate it. I have tried it before in other forms. Thanks To All for your help.

It sounds like there are enough ingredients already. I personally think both udon and tofu in one soup is overkill. If you just left the tofu out it would not detract from the taste of the soup. Add another vegetable if you want something else. . .maybe sliced carrots or onion.

Tofu is already a substitute for meat. So if you want a substitute to tofu, substitute it with meat !

Look in the "heath food" section of your groceries freezer, near the lean cuisine there are veggie and soy based mean replacers that are Delicious! they are soo much like mean most people can tell the difference
I'm a meat lover and my husband is a vegetarian this is our common ground

try soy beans or dried bean curd (although if you don't like tofu i don't know if you'll like dried bean curd). if you hate tofu why are you cooking this?
P.S. thanks for answering my question, if you like soy use young soy beans (edamame, you can find them at a grocery store) they're green, and have fuzzy shells. just shell them and boil, they taste nothing like tofu and they're healthy too.

Use eggs, but dont use the yolk. Taste real good.

Tofu is good, healthy for you too.

I agree...tofu is nasty.

Beef, pork or chicken will work well.
