I'm not a vegetarian but I'd like to work in cooking some meals without meat or chicken, but still feel like you're eating meat because of the protein, etc. Any recipe suggestions?

Eggplant, all kinds of mushrooms and tofu will give you something to "chew on" when prepared right. (look for vegan/vegetarian recipes, there are so many available on the net)

+Black beans in thick tomato sauce with garlic is also very "foody" with a rich flavour. Can be used in tacos with veggies, instead of minced meat.

+Discover the world of spices! I had no idea how important different spices and herbs were, until I became a vegetarian (now vegan).
My recent discovery is " BBQ & Grill Mesquite" from Santa Maria, a mix of spices, herbs, seasalt and mesquite( which is a type of tree). This will give anything (especially mushrooms) a smoky, rich flavour. If you can't find this one, look for other smoke- flavoured spices. It really adds something extra.


+Add some soy sauce, soy milk/cream or other beans in your meals, for protein.

+Grill a whole portobello, salt+ pepper+ herbs of your choice, and make your own veggie burger with potatoes on the side!

(choose whole grain bread for a healthier version)

You Can Make Lasagna, Spaghetti Or Chili With The "Veggie Ground"... It Sort Of Looks Like Ground Beef...

Also For Protein, You Can Use Eggs, Spinach, Beans Or Lentils...

Boca and Morning star farms make some very tasty fake meat products. The Italian style no meat sausage is very good with pasta.... Most of their products are high in protein too.

Ingredients with meatiness can make the difference. One recipe I enjoy is a "beef" stew with potatoes, carrots, onion, celery (you can add peas, corn, green beans or any combination thereof)j. Instead of beef, use small dices of portabello or porcini mushrooms. Add some lentils and a tablespoon or two of dark miso. Thicken with wondra flour. Be sure to adjust salt and pepper to taste.

Try making tacos with a 1 or 2 cans of black beans instead of ground meat. They are still very good.

Eggplant has good, meaty texture and a good taste.

I like eggplant parmesean - essentially, sliced and fried eggplant is layered in a a cassarole with red sauce, cheese, onions, and whatever else you want to toss in and baked in a medium oven until the cheese is bubbly.

Italian portobello mushrooms, they are big and meaty, you can use them fried, broiled,cut in slices with sauce, filled with tomatoes and onions, just let your imagination soar, with just some mushrooms, enjoy

PS: you get them at wal-mart and other large food stores
