I could give you recipes but who knows what you like.
My best advice is to go to allrecipes.com it is a wonderful site and does have a section devoted to easy recipes. The best thing is people who try the recipes come back and rate and review them and you get all kinds of advice.

Beans and rice is simple. It's what I'm having for dinner tonight. I'm currently cooking brown rice (I only buy brown, it's the healthiest). When it's done, I'll add some black beans and spices to it. Probably taco spices, but I'll pull out some chili powder and some tumeric. I just realized that I forgot to put veggies on top in the steamer to steam. Eh. I'll steam them while I'm eating the beans and rice.
Some veg cooking isn't as easy as putting a burger on the grill. However, two or three times a week, I put a veggie burger on the electric grill and toast some whole wheat bread and steam some veggies.
If you do searches, "vegetarian cooking", "Vegan cooking", "vegetarian recipes", "vegan recipes", "vegetarian living", "vegan living", etc. You're bound to find a plethora of stuff.
The two sites I seem to go to the most are www.veggieboards.com and www.vegweb.com I just rediscovered Fat Free Vegan, too.
I seem to make the same few things myself. I guess I should start expanding before my baby starts to eat adult food.
I hope I've been of some help.

My favorite cookbook is The Best 30-Minute Recipe which is put out by Cooks Illustrated. They have all sorts of simple tips and recipes that I almost hate going out to eat. In a pinch for dinner my go to recipe is Heuvos Rancheros or a fritatta with vegetables.

The best cook books I have ever had are Moosewood and laurel's Kitchen. I have been a vegetarian for over 30 years. Vegetarian cooking is very easy- don't be intimidated. Though it is not as easy as throwing a burger on the grill. Get a good sharp knife for chopping and a steamer and create your own recipes.

This is one of my favorites. It is pretty easy and takes aound 30 minutes to make. You can use pork chops or chicken but pork chops are better in my opinion. You will need: 1 Med onion chopped up 4 med size pork chops 1 can cream of mushroom soup soup can of milk 1 1/2 cup of rice 3 cups of water Get a medium size pot and but the 3 cups of water on high until it starts to boil. Put in some salt and the 1 1/2 cup of rice. Stir and let the rice come to a boil. Lower the heat to low and put a lid on it. The rice should take around 23 minutes. On another burn put it on medium high and put on a skillet with a little oil. (around a teaspon of vegetable or olive is fine, it is just to get the meat from sticking to the pan.) Put in the meat and the onion it until it looks cooked. The onions should be clear and the meat brown. There sould be some grease from the meat so you will need to drain it into the sink. You can either just use a lid to drain it with the meat and onions in it or or take out the meat and onions and drain that way. ut it back on the burner with the onions and meat and pore the can of cream of mushroom soap into it. Fill the can with milk and pore it in too. stir it and bring to a boil. Lover the heat to a simmer and cover for 5-10 minutes. Now you have a meal with rice, meat and mushroom gravy. You can serve it with a salad or you could have added a bag of mixed vegetable with it when you were half way done browning the meat. Good Luck and God Bless.

well cooking is something you get better at it by doing it. It's not as hard as it sounds, pretty much if you can read the recipe, you can do it. only that if you don't have experience, it'll take you waayyy longer to do it, especially the chopping part. here's what I can recommend this way you can go ahead and start out, pick your favorite dish and get the recipe and practice that one every other week. you'll see after a while, it's no big deal. hope that helps you out.

Okay, these are SO EASY AND SO GOOD!
TUNA NOODLE CASSEROLE
Buy a box of Mac and Cheese and cook it according to the directions on the box. (add 6 cups of water, boil, add noodles. when noodles are soft drain water and add milk, butter and cheese package.)
Preheat the oven to 350 degrees.
Okay, then drain a can of tuna. Add that to the Mac and Cheese.
Then add a 10.5 ounce can of Cream of Celery Soup into it. Stir it all up.
Get out a casserole dish, and spray it with non-stick spray. Put the food into it. Wait for the oven timer to go off (if it hasn't already).
It should bake about 30 minutes or so.
Okay, the other recipe is RICE WITH TOMATO SAUCE.
Boil about 1 1/4 cup of water on the stovetop. Add about 3/4 cup of dry white rice to it. When it gets soft, add canned tomato sauce to it (however much you want). Stir it in then wait a few minutes for it to thicken. If you aren't vegetarian you can add pieces of sausage to it.
You can also buy canned vegetables and just warm them up in the microwave.

Hop on over to www.kraftfoods.com They have a ton of easy recipes.
My favorite basic recipe is Fettacine alfredo with chicken and brocolli....
Boil up the pasta..you can use fettacine or angel hair pasta. Drain.
Take a shallow fry pan, add bout 1/4 cup of oil
Dice up 3 chicken breasts(bone less skinless)
Toss in with the oil over medium heat and cook until the meat is no longer pink. Add garlic, pepper, and salt for seasoning.
In another pan, put brocolli in, with water, and bring to a bowl(I buy chopped brocolli in the frozen food aisle at the grocery)
Toss the brocolli in a pot with the pasta, add the diced chicken and a jar of alfredo(you can get this at the grocery, i recommend the garlic and paremesean)sauce.
Throw in a 1/2 cup or so of shredded cheese(any kind you prefer)
Mix and serve with garlic toast and a salad.
Heres the ingredients:
1 16oz package of pasta
1 or 2 jars of alfredo sauce(depends on how much u want to yous)
1 16oz package of frozen chopped brocolli
3 chicken breasts(boneless, skinless) thawed and diced
garlic, salt, pepper to taste.
Paremesean or any desired shredded cheese

Dear i can give a few ideas. See even i am a naive. but i can cook a few good things.
First of all lets make soup. Collect all available vegetables.
one onion, Two tomatoes, one carrot, beans, some peas, little cauliflower. Cut into small pieces, put three cups water some salt and black pepper and pressure cook for ten minutes. stain and keep aside the stalk. now grind the sieved vegetable mixture and mix in in the stalk serve hot.
Now I'll suggest garlic vegeetable with rice.
Rice you know how to make. I'll tell you about the veg.
Put two spoons oil in a pan and put some 5-6 crushed garlic flakes and keep stiring. just after a minute put two finely cut onions and after another minute add finely cut capsicums. put one spoon ketchup,1/4 spoon chilli sauce, 4 drops soy sauce some salt. now to make a gravy mix one spoon cornflour in half cup warm water. put it in the mixture in the pan and add enough water to make a gravy. have it with rice.

Okay, you like pasta...I will give you two of my favorites...the lemon linguine is super easy, and can be used as a side or a main course. The Alfredo is a touch more involved, but you can do it with different things, such as asparagus, bacon, etc, and can be served by itself, or is wonderful with grilled chicken breasts!
Lemon Linguine
1 pound linguine
2/3 cup olive oil
2/3 cup grated Parmesan
1/2 cup fresh lemon juice (about 3 lemons)
Salt and freshly ground black pepper
1 tablespoon lemon zest
1/3 cup chopped fresh basil leaves
Cook the pasta in a large pot of boiling salted water until tender but still firm to the bite, stirring occasionally, about 8 minutes. Meanwhile, whisk the oil, Parmesan, and lemon juice in a large bowl to blend.
Drain the pasta, reserving 1 cup of the cooking liquid. Toss the pasta with the lemon sauce, and the reserved cooking liquid, adding 1/4 cup at a time as needed to moisten. Season with salt and pepper. Garnish with lemon zest and chopped basil.
Fettuccine Alfredo with Prosciutto and Peas
2 tablespoons extra-virgin olive oil
2 shallots, minced
1 teaspoon minced garlic
1 cup heavy cream
Salt and freshly ground pepper
1/4 pound prosciutto, julienned
1 cup frozen peas, thawed
1/2 cup freshly grated Parmigiano-Reggiano, plus more for garnish
1 pound fresh fettuccini
Heat olive oil in a large skillet over medium heat. Add shallots and garlic and saute for a couple minutes or until tender. Add cream and cook for 1 to 2 minutes. Season with salt and pepper, to taste. Add prosciutto and peas and toss gently to combine. Sprinkle cheese over top and stir to melt and combine. Cook until heated through.
In a large pot of boiling salted water, add fettuccini and cook until al dente, just a couple minutes for fresh pasta. Drain, reserving 1/4 cup pasta water. Add the reserved pasta water and drained fettucini to skillet. Toss to combine pasta with sauce and season with salt and pepper, to taste. Serve, garnished with extra cheese.
Bon Appetit!
