You go to your public library and you check the catalogue under subject. The subject is vegetarian or vegan cookbooks. You place holds on the titles that you find, you borrow them as the come in, and you read them to find out if any given one is one that you want to purchase.
Then you go to any bookstore and purchase it or order it for purchase.
And you save money in the long run, because, among other reasons, my tastes may not echo your tastes and the cookbooks that I have may not be ones that you like.

My favorite vegan cookbook is Very Vegetarian by Jannequin Bennet and Carl Lewis. I also really like The Shoshoni Cookbook by Anne Saks and Faith Stone. And I checked a really great one out of the library once called Calci-Yum!, but I don't remember the name of the author. And there's always good ol VegWeb: www.vegweb.com.

Moussewood cookbooks are not vegetarian (commonly-accepted definition of one who eats no meat, gelatin, lard, or rennet, but does eat eggs and cow milk).
I would suggest Vive Le Vegan! by Dreena Burton
ExtraVeganZa (Phoenix Organic Farm)
Vegan With a Vengeance by Isa Chandra Moskowitz

Look into the Moosewood cookbooks, and anything by Deborah Madison. They're mostly veggie, but have some vegan stuff. I got those for a friend of mine.
