La rapure is a grated, specially prepared potato mainstay of Acadia, to those not in the know.

Especially if you're not Acadian, what do you think of it?

answerer 1.. yep lots of carbs... Acadians were fishers/farmers.. loved carbs

answerer 2.. try this .. un Acadien or une Acadienne (depending on the sex)
and yeah, I think its a fantastic meat and tater meal (but I just use butter.. no molasses)

Louisiana I get (the Cajun cousins live there) but in Colorado? WTF?

When working as a chef and doing 2 stints in Halifax and one in Digby, I had it a number of times, took a stab at it once muself, it is a bit labour intensive, having to poach the chicken grate the potatos, and the end assembley, but if made right it is a nice homey dinner.

When coming back from Digby, I came in to Saint John NB harbour and there is the big Crosby Molasses tank as the ferry pulls in, I use it alot in cooking and baking, even on pancakes, mostly I like it for BBQ sauce something I have been told I am quite good at making.

Between the potatoes and the molasses it must be a carb-lover's dream. It sounds something like potato pancakes (made from grated potatoes) that are sometimes served with applesauce. I think you need to be a real fan of sweetness to appreciate it. But if I saw it in a single-portion serving I would give it a try just for the experience.

I have never heard of it,however I'm well aware of molasses,as I use to eat my horse's grain with molasses,(we would have a little snack together,when I was a kid)So really?A potato pie,with molasses?Is it good?Acadia?Acadian?I would like to buy a vowel pleeeeeease,if that is on the menu..(I would still like to buy a vowel smarty pantz)
