Yummy beef recipe, My whole family loves it and it is easy and budget friendly
You can adjust the cook time if someone likes it welldone or medium rare
Beef Braciola Recipe
1 large round steak, cut into 6 inch wide portions
1/4 cup oil
1/2 cup onions, Chopped
1/2 cup Italian seasoned breadcrumbs
1 tablespoon parsley, Chopped
salt and pepper
1 large garlic clove, Minced
3/4 cup asiago cheese or romano cheese or parmesan cheese
2 large eggs
1 (32 ounce) jar of your favorite spaghetti sauce, Homemade Sauce would be great with this meal
1.Pound steak thin. You can also ask the butcher to do this for you.
2.Add oil to pan and saute' the chopped onion. Then add the rest of the ingredients and mix well together.
3.Lay out the round steak and layer on the mixture and roll up and secure with Butcher's twine or toothpics. Fry until browned. Pour in the sauce. Cook 45 minutes. Remove from the sauce and cool. When cooled remove the twine or toothpics and slice 1/2 inch thick. Pour the sauce over the rolls and reheat if needed. Serve hot. Enjoy with any type of pasta that you like.

Chicken Marsala is easy and yummy
Ingredients:
4 Chicken half-breasts -- pound 1/4" thick -- skinned & Deboned
1/4 cup flour
1/2 teaspoon Salt
pepper to taste
1/2 teaspoon Oregano
4 tablespoons Oil
4 tablespoons Butter/margarine
1 cup Fresh mushroons -- sliced
1/2 cup Marsala wine
Directions:
Combine flour, salt, pepper and oregano and blend well. Heat the oil and butter in a skillet until bubbling lightly. Dredge the chicken in the flour and shake off the excess. Cook the chicken on medium heat for about 2 minutes on the first side, until lightly brown. As you turn the breasts to the second side to cook, add the mushrooms around the chicken pieces. Cook about 2 more minutes, until lightly browned on the second side. Stir the mushrooms. When the second side is lightly browned, add the wine around the pieces, cover the pan and simmer for about 10 minutes.

Eggplant Parmesan

Show: Calling All Cooks
Episode: Eggplant Parmesan/Asparagus Pasta
1 medium eggplant sliced
1 egg beaten with 2 tablespoons milk
Dried Italian bread crumbs
Olive oil
6 ounces tomato paste
6 ounces white or red wine
Pinch dried oregano
Salt and pepper, to taste
1 clove of garlic, crushed
1/2 pound mozzarella, sliced
1 cup freshly grated Parmesan cheese
Preheat oven to 400 degrees F. Slice washed eggplant 1/2-inch thick. Dip slices into the egg mixture and then into the bread crumbs, coat well. Grease a cookie sheet with olive oil. Arrange each slice of coated eggplant in one layer on the cookie sheet and drizzle each piece with olive oil. Bake in the oven for about 15 minutes. Check that the slices are golden brown, turn then and bake for another 15 minutes. They should be browned on both sides. Set aside.
In a small saucepan dilute the tomato paste with wine. A good mix is a can of paste and a can of wine. Add the oregano, salt, pepper, and crushed garlic. In a baking dish arrange browned eggplant slices in 1 layer. Spread 2 tablespoons of sauce on each slice. Layer each eggplant with a slice of mozzarella and sauce until all is used. Top with Parmesan cheese and bake for about 20 minutes. Serve hot.

4 Granny Smith apples, or other tart apple
1 cup all-purpose flour
1/2 cup granulated sugar
2 eggs, separated
1/2 cup milk
1 package instant yeast (baker's yeast)
Butter and fine bread crumbs, for the baking pan
Preheat the oven to 375 degrees F.
Peel and core the apples and cut them into thin slices. Set the sliced apples aside. In a medium-sized mixing bowl, combine the flour, sugar, 2 egg yolks, milk, and yeast and stir gently until a batter forms.
In a separate bowl or in the bowl of an electric mixer fitted with a whisk attachment, whisk the egg whites until they form firm glossy peaks. Gently fold the egg whites into the batter, leaving a few white streaks so as not to over-mix the batter.
Lightly butter a 8-inch baking pan then dust with bread crumbs, shaking off any excess crumbs. Lay the apples slices in a decorative manner at the bottom of the pan and gently pour the cake batter in around the apple slices. Bake until the top of the cake is golden brown and a skewer inserted in the middle comes out clean, about 1 hour.

30% cabbage
40% fav pasta, I use Penne
10% Italian sausage. I like hot but most prefer mild

what i simply love, and i saw this on tv one time and tried to make it myself, its very simple to make, which ofcourse is ideal when cooking for such large numbers.
olive oil in the pan, high heat.
chuck in some pappers (paprika's) of a ssorted colours, cut in rings or strips. fry them. add some black olive's. keep frying until the paprikas are nearly done.
throw in some sugar and let it carmelise. then cool the pan with half a cup of white wine vinegar and let it boil for a bit before serving. its simply delicious.
especially, with lamb (preferably lambchops stuffed with some italian cheese, like parmezan or mozzerella.)

frittata is always ok for partyes,you can make 5 or 6 different flavor(asparagus,spinach,zucchini,prosciutto taleggio,etc)
lasagna al forno or cannelloni you can prepare them one day in advance,if you do pasta do insalata di riso or insalata di pasta(penne) grill vegetables ( eggplant works very well zucchini and artichoke) and lay them in a plate add some olive oil parsley and garlic salt pepper very simple,and of course a lot of affettati(salami prosciutto coppa bresaola etc) and mozzarella and pomodoro(tomatoes) and do not forget the wine!!!!!
