I wouldn't say it would be a disaster just awkward. Red wine vinegar is used in mediterranean cooking and rice vinegar is used in oriental cooking. I would be like substituting olive oil for canola oil in a cake recipe.

If you do decide to use red wine vinegar keep us informed of the results you had using it.

Rice wine vinegar is slightly sweeter, milder and less acidic that other vinegars. You might make a dipping sauce by diluting and sweetening your red wine vinegar with honey and a little water!

Who knows? Perhaps you will discover a whole new and delicious way to eat Spring rolls!

I don't know about a disaster, but you won't have the same effect. Red Wine Vinegar is pungent and has a distinctive flavor. If you don't have the rice vinegar, then try using white wine vinegar instead.

Use the rice vinegar, it has a different flavour. Use the red wine vinegar on salads.

Where do you get this recipe? I'm Vietnamese and we've never use any kind of vinegar for Spring Rolls. What kind of dipping sauce are you making?

No, you would just have a little different flavor but it would be just fine.
