Spinach manicotti with garlic bread and a nice red wine. You can have a tossed green salad or minestrone soup before and a bowl of ice cream and cookies for dessert. That would be a most impressive dinner and it is easy to make!

I vote for a nice, easy pasta. But, my favorite thing in the world is cooking together. Like, going the market, getting some really nice bread, a great bottle (or two :) of nice wine..or mix some 'tinis, and make some pasta together. Better yet, soup is a wonderful dinner to build together. Nice music in the background, a bit of chopping ( plenty to talk about and make jokes about), drinks, and then you can sit by candlelight and enjoy the fruits of your labor.

First off, nothing messy or gassy. :) (Like tacos)
Pasta's good. How about a homemade mac & cheese? Some crusty French bread with balsamic and olive oil, and a green salad with feta crumbles.
Or if you have a Foreman-type grill, you could do grilled boneless pork loin in an Asian marinade, with a steamed veggie and some rice.

Why don't you just ask him what his favorite things are?
Most people enjoy chicken Parmesan. You could make that with a salad , some bread or pasta, and a nice dessert & coffee. Choose a red wine, either Shiraz, Merlot or Pinot Nior for your dinner.

The first meal I made my new boyfriend was chicken fajitas and he fell in love (with the food and me!) It's so simple to prepare and very colorful, healthy and tasty!

it all depends on what kind of mood you both are in. if youre both in a happy and creative mood then cook something with a little zing in it. or if youre in the romantic mood then cook something italian.
