Salads are great for lunch.
Baked vegetables are great for dinner parties (most people have so little time to cook these days, they haven't had a baked meal in a long time and have forgetten how delicious a baked potato can be).

You should do a substitution for meat with high protein foods like beans, nuts, tofu, seaweed. So for example instead of beef burrito you have a bean burrito, instead of hamburger have a veggie burger, instead of beef stir fry have a tofu stir fry. Peanut butter/jelly sandwich instead of ham sandwich, etc...
A good breakfast could be a combination of some of the following, oatmeal, fruit, yogurt, orange juice, toast/peanut butter.

I'm not vegetarian, but I eat vegetarian meals regularly. Try your local bookstore for vegetarian cookbooks. It isn't that difficult to come up with meals.
