White chocolate contains no cocoa liquor (ground cocoa solids), only cocoa butter, therefore it is not chocolate.

Although there is not yet a formal definition, white chocolate contains cocoa butter but no non-fat cocoa solids. Mostly used as a coating, it contains sugar, cocoa butter, milk solids and flavorings. Not really "chocolate" since no chocolate solids other than cocoa butter are present. Sweet, milky dairy flavor with a hint of chocolate from the cocoa butter. Color ranges from pure white to yellow-white. Used for candy bars; baking chips; bakery coating.

The FDA established rules for labeling white chocolate which went into effect on January 1, 2004. The rule states that a product labeled and marketed as white chocolate must contain at least 20 percent cocoa fat, 14 percent milk solids and 3.5 percent milk fat, and not more than 55 percent sugar (or other nutritive carbohydrate sweetener).

White chocolate actually has the same texture and consistency as (Brown) chocolate but without the cocoa. That is why it is called white chocolate. White chocolate does NOT contain any of the "good stuff" that is associated with regular chocolate.

White chocolate does typically include lecithin as an emulsifier, and certain flavorings, particularly vanilla or vanillin. The low melting point of cocoa butter allows white chocolate and chocolate to remain solid at room temperature, yet melt easily in the mouth. As such, white chocolate has a texture similar to that of milk chocolate, and through the use of undeodorized cocoa butter, retains some degree of its flavor.

There is no cocoa in white chocolate so technically it is not considered a real chocolate. Many people consider it a chocolate anyway though.

There is a lot of other old and outdated information about this on the web, but everyone in the industry knows that real white chocolate contains cocoa butter while the cheaper confectioners coating contains vegetable oil.

White chocolate comes from the cacao bean, same as any other chocolate. However, it is only the cocoa butter: the fat which is found in the cacao bean. The cocoa solid, which is the brown stuff, is removed. White chocolate is pretty much a byproduct of making cocoa powder. The brown cocoa solids are separated from the cocoa butter. The cocoa solids are powdered in to cocoa powder, and the cocoa butter is tempered into white chocolate. Hope this helps! :)

They call it white chocolate because there's cocoa in it.
But it's not real chocolate. It's actually vanilla

no it doesnt have cocoa in it. I forget all the details but I know that its not.
Milk chocolate has milk added to it thats why its lighter.
Dark chocolate hasnt had the milk added so it stays dark.

Chocolate = cocoa butter + cocoa. White chocolate has no cocoa, but has cocoa butter. White chocolate is chocolate-derived, not a full chocolate.
