Smokies and Perogies. (you can keep them in the freezer and use them as you need them.)
sweet and sour meatballs and mashed potatoes (so good, if you haven't tried this combo, you should. Buy a small pack of ground beef and divide it into like 3. Make you meat balls out of that and potatos you just peel what you need.)
speghetti. use up another third of your ground beef or the rest of it and juts freeze your sauce for when you make the pasta next. Your next speghetti night will be hassle free. Make a garlic bread out of a plain peace of bread. Put some butter on it and sprinkle garlic powder on it and broil for 30 seconds.
chef salad. you can boil as many eggs as you want in it and just get a thick slice of ham and a thick slice of turkey from your deli. grate a little cheese and voila.
grilled cheese and ceasar salad.
If all else fails, get the company's coming cook book called 'cooking for two" Make the full portion and eat the left overs for lunch. There are some really good ideas in there.

1 salmon filet
1/4 teaspoon fresh lemon zest
1/4 teaspoon of your favourite fresh herbs tarragon,dill and thyme work well
salt and pepper to taste
thinly sliced red onion
thinly sliced fresh fennel
quartered fresh strawberries
balsamic vinaigrette
baby salad greens
good quality olive oil
pre-heat oven to 400F.
rub salmon with zest,herbs,salt and pepper.
heat some oil(1-2 tablespoons) in a pan until hot
quickly sear both sides of the fish then place in the oven until desiered doneness.
prepare salad with the onion,fennel,strawberries and balsamic vinaigrette.
place salad in the center of a large plate and place the cooked filet on top of the salad.
garnish with some of the berries and a little of the zest and fresh herbs.
add some fresh bread and your favourite white or rosè wine
voila simple tasty elegant dinner for one

I am always making meals for just myself...one of my favorites is taking whole wheat pita bread and making a personal pizza out of it. You can use any veggies, meats, or cheeses you want. It's really delicious! And you just have to pop it in the oven at like 350 for about 10 mins. You should give it a try

Cooking for one or two is always a challenge, but can be done! Since I've spent most of my time on my own, I've learned that I can make an extra meal out of cooking another chicken breast, or use leftover steak for a stirfry. Here are some thoughts:
1. Stir-fry for One: 1 boneless, skinless chicken breast, 1/2 cup sliced celery, 1/2 cup sliced carrots, 1/2 cup cauliflower florets, 1/2 cup bean sprouts, 1/4 cup pea pods, 1/4 sliced red bell pepper, 1/2 tsp minced garlic, 2 green onions sliced, 3 T canola or peanut oil, 2 T soy sauce, 1 T Rice Wine Vinegar, 1 tsp Sweet chili sauce, 1 tsp ginger. Cut chicken breast into pieces and season with salt, pepper, and garlic. In wok or skillet, heat oil and add carrots and cauliflower. Season with salt and pepper. Toss frequently until they begin to soften. Add chicken, celery, and bell pepper. Saute until tender. Add bean sprouts and pea pods and green onion. Stir together soy sauce, vinegar chilie sauce and ginger and blend in 1 tsp corn starch. Add to stirfry and toss to coat. Season to taste.
2. Grilled Cheese and Tomato Bisque
3. Hamburger patty with melted cheese, green salad, and fresh fruit.
4. Chicken pot pie (use premade pie crust, 1 chicken breast, cream of chicken soup, frozen mixed veges, and add a little white wine and milk. Bake at 350 degrees until browned)

I lived by myself for a while, and now my boyfriend sometimes works odd hours, so I have eaten by myself plenty of times. I NEVER cook only a single portion of something. Make any recipe for two (reduce if necessary). You can usually freeze the leftovers. Or, I will pack the leftovers in my lunch and take it to work.

Oh have I been there! I still often cook for one, due to my guys schedule!
I like to get fish and broil it, with a steamed veggie and rice on the side.
Same with a chicken breast.
Pasta is pretty easy to cut down to size, and pretty versatile.
Sometimes I get adventurous and make homemade pizza, but that is cuz I know my guy will eat the leftovers! lol!
Sometimes I will just make myself a little plate of stuff I love, like steamed edamame, or artichokes with lemon butter, or cheese and sausage and fruit...it doesn't always have to be a big meal!!!

This is easy, just buy what you like fresh. It will always taste better. We have been programmed to think that buying in bulk is better, but if you don't utilize what your purchase it's still a waste of money.
Buy a piece of meat that you like, enough fresh veggies for you and a potato. Simple, easy and no leftovers.

Can make soups and chilis and spaghetti sauces... they freeze very well and defrost just as easy. Been there done that
