I think that sounds almost perfect, but you will need some green. SO.. definitely a cesar salad with croutons,parmesan and romaine. Very simple. I ALWAYS do loaded potatoes for steaks, it just flows well. May I suggest for the adults to add a cajun seasoning to the steak. It is absoulte delicious. The best steaks I have ever tasted were new york strip steaks on the BBQ grill, but if you can use a grill, try using your broiler. It also makes great steaks. If you must use stove top method, have a cast iron skillet and I always do medium or medium-rare to be on the safe side, unless you plan on making everyones steak "made to order". I think this meal will be perfect. Make sure to get a good thick cut of meat, I always use new york strip steaks because they are boneless, thick, and not too expensive. Good luck! Oh BTW! Red wine is to be paired with beef. And sometimes a blush wine. If not certain, then ask them.

Garlic and Dill Salmon
INGREDIENTS
2 (1.5 pound) salmon fillets
1 head garlic, peeled
1 ounce fresh dill, chopped
1/2 cup olive oil
1 teaspoon salt and pepper to taste
DIRECTIONS
In a food processor, process garlic to a rough mince, add dill and olive oil and pulse a few times to combine.
Lay fish fillets in a baking dish, skin side down. Rub garlic mixture over fish. Refrigerate for 2 hours.
Preheat oven to 375 degrees F (190 degrees F).
Bake in preheated oven for 15 minutes. Do not overcook.

There are some great fish recipes in the South Beach Diet cookbook. I'm not a huge fan of fish, but Salmon is a good idea.

Swordfish Teriyaki or Cherry Snapper Ceviche sounds good..
Why not just take her out to a nice restaurant for dinner instead. Thats what im going to do for my mom's b'day this week.. With good food, good music and atmosphere. And little dishes to be done later. :D

Wow. How about veal piccata, steamed crab legs or lobster with a garlic lemon butter, filet mignon in a cajun cream sauce, curried rice pilaf, French bread with balsamic and olive oil for dipping, green salad with feta and a lemon vinaigrette, cajun scallops, um, my brain's getting fried. At least those are my favorites and I'm only 16 years away from 50!
