Oriental Chicken
4 plump, free-range chicken thighs
5 fl oz (150 ml) Shaosing (Chinese brown rice wine)
3 fl oz (75 ml) Japanese soy sauce
1 heaped teaspoon peeled, grated fresh root ginger
4 cloves garlic, crushed
5 whole star anise
1 teaspoon toasted sesame oil
To garnish:
1 small red chilli, deseeded and cut into fine shreds
1 spring onion, cut into fine shreds
To serve:
5 fl oz (150 ml) rice, cooked
Pre-heat the oven to gas mark 6, 400°F (200°C).
Remove the skin from the chicken. Then place the skinned chicken thighs in the casserole. Now mix the rest of the ingredients, and 2 fl oz (55 ml) water, together in a bowl and pour this mixture over the chicken. Place the casserole over a medium heat and bring the liquid to the boil. Now transfer it to the oven (no need to cover) and bake on the centre shelf for 40 minutes, turning the chicken halfway through the cooking time.
Serve the cooked chicken on a bed of plain rice with the sauce poured over and the shreds of chilli and spring onion sprinkled on top.
or Stir-fried Chicken with Lime and Coconut
2 Traditional Free Range boneless, skinless chicken breasts
grated zest and juice 1 large lime
5 fl oz (150 ml) tinned coconut milk
1 dessertspoon olive oil
1 green chilli, deseeded and finely chopped
1 dessertspoon Thai fish sauce
4 heaped tablespoons fresh coriander leaves
4 spring onions, cut into 1 inch (2.5 cm) shreds, including the green parts
First of all chop the chicken into bite-sized pieces and place them in a bowl with the lime juice and zest. Stir well and leave them to marinate for an hour. When you're ready to cook the chicken, heat the oil in the pan or wok over a high heat, add the chicken pieces and stir-fry for 3-4 minutes, until they're golden. Then add the chilli, stir-fry for 1 more minute, and add the coconut milk, fish sauce and half the coriander and spring onions. Cook for another 1-2 minutes, then serve with Thai fragrant rice and the remaining coriander and spring onions sprinkled over.
or Thai Creamed Coconut Chicken
1 cooked chicken weighing about 2 lb 4 oz (1 kg), stripped, or 5 cooked chicken breasts
14 fl oz (400 ml) tinned coconut milk
1 level teaspoon coriander seeds
½ level teaspoon cumin seeds
2 cardamom pods, lightly crushed
2 tablespoons groundnut or other flavourless oil
2 medium onions, peeled and finely sliced
2 cloves garlic, peeled and crushed
½ oz (10 g) fresh coriander
1 level teaspoon turmeric
4 red chillies, deseeded and finely chopped
1 level dessertspoon finely chopped fresh lemon grass
2 tablespoons lime juice
salt and freshly milled black pepper
To prepare the chicken, remove the skin and cut the flesh into strips about 2½ inches (6 cm) long. Next, the spices will need roasting, so heat a large frying pan or wok – without any fat in it – and, when it's really hot, add the coriander, cumin and cardamom pods. Allow the spices to roast briefly – about 45 seconds – shaking the pan from time to time, then tip them into a mortar, removing the seeds from the cardamom pods and discarding the husks, and crush them all fairly finely.
Now add the oil to the frying pan or wok. When it's really hot, fry the onions and garlic over a medium heat for 8-9 minutes, until they're nicely softened. Meanwhile, strip the leaves from the coriander stalks, reserve these, then chop the stalks finely.
When the onions are ready, add the turmeric, chilli, crushed spices and coriander stalks, along with the lemon grass, to the pan. Stir these thoroughly together, then pour in the coconut milk and lime juice. Add some seasoning, then simmer everything gently for about 10 minutes, uncovered, by which time the sauce should have reduced and thickened.
Now add the chicken to the sauce and simmer gently for 10 minutes or so to heat it through completely. Serve the chicken on a bed of Thai Green Rice, garnished with the coriander leaves.

Breaded olives - this is great
250 gr' green pitted olives
1 red onion peeled and minced
1 garlic clove peeled and minced
4 tabs finely chopped fresh parsley
cayenne
2 tabs olive oil
Coating
1/2 cup all purpose flour
1 large egg lightly beaten
1/2 cup finely ground breadcrumbs
olive oil for frying
Place the onion, garlic, parsley, olive oil and cayenne in a food processor and pulse on until it's pureed and smooth. Remove to a bowl. Stuff each olive with the filling.
Spread the flour onto one plate and the breadcrumbs onto another. Heat about half an inch of olive oil in a large, heavy skillet over medium flame. Roll the olives in the flour, then in the egg, and finally into the breadcrumbs. Fry over moderate heat until the breadcrumbs have turned golden. Remove and place on paper towels to drain .

Bread Sticks
3/4 c warm water
3/4 c warm beer
1 pckt dry yeast
3/4 c olive oil
1 tb fennel seeds
1 1/2 ts salt
4 1/2 c flour
Glaze
1 egg
1 tb water
Dissolve yeast in warm water and warm beer for 10 minutes or until very faomy. Add olive oil, salt and fennel seeds. Mix in 3 1/2 cups flour and knead until smooth and elastic adding more flour as needed to prevent stickiness. Place dough in oiled bowl, cover and let rise double.
Punchdown dough and divide into 12 balls and divide each ball into 4 pieces. Roll each piece into a long rope and place on greased baking sheets at least 1 inch apart. Brush with egg glaze. Bake immediately, 350*F (180*C) until golden about 30 minutes.

hmm there is this quick pick me up. its called "pizza pan de sal" its pizza that uses pan de sal as crust but you can use any bread. burger buns work well :)
you need:
tomato sauce or pizza sauce
cold cuts (ham, pepperoni,hotdogs etc)
or
meats (burgers, bacon etc)
or
canned spanish style sardines (makes zesty pizza's)
or
all those for toppings
button mushrooms
bell peppers
onion (cut into rings)
cheese (i suggest quick melt cheese)
well, actually you can add alomst anything to it. even left over meat dishes. be creative :)
spread tomato sauce/pizza sauce to the bread, add toppings, veggies then grate cheese above it. put in oven toaster/oven/turbo broiler.
well it's delish but i dont think it goes with tea... why not try biscuits? i got this recipe from http://www.allrecipes.com try going to that site for more ideas.

My fav for a quick get togeather that keeps you out of the kitchen is to go to your closest deli and get different sliced meats & cheeses, fruits, and veg's. Make a nice tray, have a few dips & crackers to accompany it. It will be a nice selection, have eye appeal, and easy.

Chicken or fish massaman curry
Veggies of own choise
curry, massaman curry paste or massaman in a can
1 big can coconut milk
salt and other spices of own choise
Fish or chicken
chop veggies and fry in oil in a pan.
Add curry, coconut- milk and spices.
Let boil for a minute and then add fish to it
If you use chicken you dice it and fry before you put veggies on
This is really good and simple...takes no time
serve with rice, salat and good bread to dip in sauce for ex. indian nan bread og french baguette

How about a roast chicken salad with wedges, fish and chips, sirloin steak, lasagnia, pasta and garlic bread, or for something small tomato and basil soup with hot buttered toast! Yum!
