This is one way, melted Mozzarella cheese and Cheddar cheese over a hot slice of pizza. The other, a personal favorit, is to have melted Cheddar cheese over any types of burgers, coming straight out from the grill... yum...

Bake a large potato wrapped in foil. When cooked peel back the foil a little, make a hole by scooping a little of the potato out. Fill with cottage cheese, any herb of your choice, little slivers of bacon, slight sprinkle of salt and pepper. Re wrap the potato for a couple of minutes for flavors to go through. Unwrap on to a plate then sprinkle with Parmesan cheese. Enjoy with a light white wine.

My favourite cheese.. danish blue cheese. that stinky white cheese that has blue spots! I often joke and say "maybe it's got blue measles or blue pox .. it can't be chicken pox cause it ain't chicken!" People that hear me joke like that groan!
Danish cheese is great wrapped up with cooked cabbage or in a lettuce sandwich. Danish cheese is also good to use in place of salt. it gives many foods that extra flavour! I wouldn't be surprised if the Canadian TV Chefs use it to increase flavour in their dishes! I'm not telling all my cooking secrets.

Feta cheese with rocket leaves, ripe tomatoes, marinaded olives and cucumber, or baked Camembert, you know you get it in the round wooden boxes? take the lid off, poke some slivers of garlic and chopped herbs into slits in the top of the cheese rind, then bake for about 10 minutes, the cheese melts inside the rind, delicious with baby potatoes dipped in the melted cheese.

Velvetta, cheddar, or American sliced.
The secret is to toast the sandwich in a skillet on the stove with butter. Browned nicely. Yum

I like it shredded on top of a salad and stuffed in mini meat loaves. Parmesan is great on toasted garlic bread. Jack cheese on fried zucchini is addicting. I hope these ideas are a little different from what you expected or are used to.
