She should be well spoken. She should be well groomed and well mannered. Too many people are lax these days on how they raise thier children. There is no respect for authority or for elders. A well mannered young lady should show respect for both. She should also know that there is a time and place for certain behaviors. Dress like a slob, burp or cuss at home, not during an interview! :)

If I could change the "young lady" part of your question to read "young person" I would, because I think there is no difference. But have it your way...
I think a young lady should be observant and thoughtful... experimental (you only live once and need to know what it's all about and don't want to end up questioning when you're already settled).
That's about it. Of course, use your salad fork (far right) for the salad and don't burp at the table and all, but really, I think that a young person should do as any other person - live for the day (experience life), reflect on yesterday (learn from past and others) and plan for tomorrow (you won't always be a young lady/person).
And don't forget to not pick up that fork until the last person has been served with their meal! =)

speak clearly and not mumble
do not swear spit in public or talk really loudly on buses
trains etc - don't say for example she said" like "he wanted !"like" - its so common
don't wear a lot of pink
please and thankyou and excuse me as everyday words
table manners - able to use a knife and fork correctly
no tattoos or fat bellies hanging out or thongs sticking
out
body piercing
its all so yuk

Educated. Uses manners. Is conversationally adept. Very much the same criteria as that for well bred young man. Middle aged female or male.
Is isn't difficult - it just takes wanting to be different from your peers.

A young lady who treats me like a gentleman and expects to be treated like a lady. Clothing and other things count as well, but overall, it all comes from the attitude within.

No cussing. I think a foul mouth over rides good looks. I also think she must walk striaght, not slouched, and lets see, She must stand up for herself. I am a girl, and trust me, I had to stop cussing, because around the age of 20, I heard some girls cussing and thought that sounds so bad......then noticed that must be how I sounded!

Sitting with he legs close enough not to see her stuff...and never getting a plumber's peek at her thong! I call that Thong Gone Wrong!!!
And covering her belly so we can't see her muffin top or jelly roll or stretch marks! Like the other person said...be modest!
And holding the door for older people!
