What does "chosen" mean? To most Christians it means that Jews would be (and were) the ones to whom God would first reveal Christ to - His "new covenant." The one who would fulfill hundreds of prophesies from the OT.
The major point of most of the laws and procedures in the OT - from a Christian perspective - is that we can't do it on our own. We can't meet all those requirements without help. That's why we have faith in Christ. He pays the bill, if you will, for all the places where we fall short.
It's not a "this" or "that" sort of thing, more of a first half, and second half, of the story.
Regarding Paul - there's something (in Acts I think) where he is given equal status among the other apostles. He's just not some guy they picked up off the street.

Jews don't believe in Jesus, they mistakenly think He was just a prophet, not the son of God; so since Jesus Christ----we are called Christians. Paul did meet Jesus on the road to Damascus, that is why he said, "who are you Lord" and his name was changed from Saul.
