I know there is a way to hold the knife to do this, but I never get it right. Help!

Look at the steak. You should easily be able to see the long strands of muscle going in one direction. This is almost always the long side of the steak. Cut perpendicular to the long strands. This turns the long chewy strands into very short, tender strands.

There are distinct lines running through flank steak and in some preparations you want to shorten these lines to make the meat easier to chew. Simply use a straight edged knife and roll or fold the meat with the lines flowing in the same direction. Then begin your cuts across the lines. Good Luck!
