I've got a lot of uncooked yukon potatoes and a few white onions. (aside from homefries), any ideas as to how I can use them up?

toss in some cheep cube stake and you got hash for 3 people or add some beef and oinion bulion and you got potato soup \

Make mashed potatoes with the Yukons, with garlic and cream cheese. MMMMMM.

For the onions, make French Onion Soup. Add a salad and right there you have a meal!

Pierogies! It's basically like a mashed potato ravioli. Mash the potatos with the onions and you can add cheese if you like. Fill premade pasta sheets (available in the refigerated section in the pasta aisle) seal and cut. Boil for about 2-3 minutes and drain. Crisp them in a fry pan with a little butter, salt and pepper to taste. Delicious!!!

Granny's Smothered Potatoes
Place tow tablespoons vegetable oil in a black cast iron skillet add cubed potatoes and one chopped onion, Salt and black pepper to taste. Keep stirring to prevent scorching. Cook on medium high heat until the potatoes are done. Serve over hot cooked white rice.

Slice potatoes and onions. Potatoes should be fairly thin slices. Brown the potatoes and onions in vegetable oil until potatoes are soft. Add sliced smoked sausage. Add garlic powder, salt, and pepper and other seasonings if you choose. Just heat through and enjoy.

How about burritos? Can you get flour tortillas in your area? Fry ground beef with onions and garlic, salt and pepper and the potatoes until meat is browned and potatoes tender. Add cumin and green chile, if desired and available, salsa and any kind of grate cheese. Spoon down middle of warmed tortillas, roll and serve with extra salsa.

Make tortilla, saute them in the pan with garlic and olive oil in a medium heat and brown them slowly. Add beaten eggs and allow it again to cook slowly. When the egg is set use a plate to pull out of the pan and flip it over so that both sides are browned easily. You can eat it right away or take it to work for lunch.

Peel and slice your potatoes(thin) layer in a baking dish with onions butter and a little milk. Top with bacon and cheddar cheese. Bake in the oven(covered) at 375 for 45 minutes.
the last 15 minutes take cover off to brown bacon and cheese.

make seasoned mashed potatoes, add the onion, and make potato cakes with them-just form into patties and fry in a little oil until crispy. You can add in a beaten egg to help them stick together. Great with cocktail sauce.
