Bumps on a log? Spread peanut butter into the 'slot' on a stalk of celery and top with a few raisins. You could mix the PB with a little margarine first, to make it easier to spread.

Silhouette sandwiches? These sandwiches are open-faced. For two, you'll need two slices of bread, two slices of processed cheese (like Kraft singles) and one slice of bologna or similar lunchmeat -- and a cookie cutter. Butter the bread and lay one slice of cheese neatly on each slice of bread. Use the cookie cutter and make a cutout in the center of the bologna slice. On one sandwich, place the cutout; on the other, place the piece from which it was cut. These are fun, simple, and different.

Could you clarify a bit? Does this mean no ingredients can be refrigerated beforehand, or is it that it doesn't need to be refrigerated afterwards?

Otherwise, my first thought was wraps, sliced on the diagonal with a garnish. Or a Cobb salad with all the toppings elegantly arranged. But that requires some form of cooler at least if you're allowed that.
