I am sure you could eat them, but generally when you bake them the skin becomes harder than the skin on a regular baked potatoe.

Yes, you can eat the skins, make sure you scrub them down. You can also microwave the sweet potatoe. Stab it well and put it in the microwave it takes about six minutes depending on size. You can also do it for three or four minutes and then rub it with oil or butter and a little salt and put it in a hot oven if you like a crispy skin. Putting it in the microwave saves on baking time and keeps it from tasting dried out eitherway you do it.

You can cook sweet potatos in the same way you would cook any other potatoe and yes you can eat the skins .

I love to rub the skin with a little butter, then wrap in foil & bake til just tender. Slice open potatos with a knife, then add a mixture of butter, brown sugar, cinnamon & pecan pieces inside then pop back into oven for about 5 minutes. They taste yummy - skins & all.

You certainly can. They are really yummy if you cut them in half when they are cooked, mash up the potato and mix in butter and cream cheese and spring onions. Then loads the skins back up and sprinkle on cheese and finish off in the oven until the cheese is golden and bubbly.

Yes, you can eat the skins just like a potato....they are very good.
If you poke them with a fork...you can microwave them. Just like a regular potato. Treat them like a baked potato...with butter...but use maple syrup or brown sugar. Delicious.

Good for you. Sweet potatotes are real healthy for you. My mom used to bake a bunch of s.p. and that what we'd snack on (not potato chips or popcorn). Just make sure you pierce them if you bake them so they don't burst while cooking (might want to put a pan or some foil under them to catch the juice runoff). In college, a friend of mine introduced me to putting butter on fresh-baked s.p.--but these days I can't do butter but s.p. is good all by itself.

Eat the whole thing - delicious...
I find they cook much quicker than an ordinary spud. So tasty, that I don't always need butter on them, just a dash of black pepper.
Had some tonight with roast chicken, chopped into chunks,
splashed with olive oil and baked for about an hour - no need to par-boil - tasty sweet roasties!
