Sour cream does taste sour to me. Maybe not as sour as a lemon, but there's definitely some sourness.

Sour cream is cream that has lacto-bacillus bacteria added to it. The bacteria breaks down the milk sugars and as a result increases the acidity and produces sour tasting compounds (lactic acid).

The bacteria is not harmful to humans.

There are many different strains (types) of lacto-bacillus bacteria.

For example, If you use milk instead of cream and dependent upon the type of bacteria used, you'd end up with buttermilk or yogurt.

sour cream is made from milk that is nearly curdled like spoiled and they add stuff to improve the taste
