When I think butter sauces, I think of butter is used as an ingredient... but other liquids give the flavor.

For dessert, bread pudding contains a flavorful alcohol - bourbon or rum.

For savory sauces, you have a reduction but butter is used to emulsify and thicken the sauces.

Re-reading your question, my answer is the butter gives the sauce body.

Butter in General is used to Emulsify Sauces, make them smoother.........cut Acidity like in a Lemon Butter
