This is my husband's that he came up with by total accident, and it really has some zip to it!
1 can Rosarita refried beans with jalapenos
1/3 pound Velveeta, cubed
1/2 bottle of Taco Bell hot sauce
1 little can of chopped green chiles
A little splash or two of milk
Nuke the beans, cheese, hot sauce, and chiles together, stirring occasionally until it's all melted and smooth. Add a splash or two of milk until it's the right consistency for you. Stir well, nuke just a little bit more until heated through.
You will not believe the zip this has! It's addictive!

If you like green chile- a real good dip I make- I boil about 6 peeled & cleaned tomatillos meanwhile chop 5-6 green onions and 1 medium tomato. When tomatillos become soft I mix with the onions and tomato. I then add one small can chile verde and juice of 1/2 lemon or lime.Then you can add salt to your liking (I use sea salt). Once mixed and cooled add about 1 cup mexican cheese (I use sargento or kraft) stirring well. You can either serve cold or heat in microwave. Best served with gold tortilla chips. Also there are small simple cookbooks by Ortega that have good recipes.

I always make this for my family. It takes a little chopping and dicing but its good....I call it cheesy pico de gallo...
tomatoes-- roma tomatoes are much better
onions--any kind will do
Serrano peppers-- or whatever kind of fresh pepper you like
cilantro--
mild cheddar cheese--finely shredded is better
Chop and dice the tomato, onion, pepper and cilantro.
Then in a blender chop up a few more tomatoes.
Cut up the cheese a little more if you want or just mix all the ingredients together. Depending how much you want to make you kind of do the estimating adding some more of this or that. Its great with tortilla chips or on anything like chicken or fajitas.You can also warm it up to melt the cheese a little. Try it ...I know you and everybody else will love it...

I guess this isn't really unusual, but it is very good. Use a glass baking dish. (9 x 13) Spread one package of cream cheese on the bottom. Use one can of Hormel chili and pour over top. Then top with any shredded cheese. Bake until heated through and serve with chips.

Authentic or Americanized quasi Mexican?
Try some cream cheese with Jalapeno Jelly or Cream Cheese with Chipotle pepper.

Well i dont know about a dip, but recently i met up with a friend of mine who is mexican, and she gave me this recipe, thats made with Spaghetti, its spaghetti pasta noodles with hot salsa on the top instead of spaghetti sauce, Use Groundmeat and taco seasoning mix in the groundmeat, put on spaghetti and salsa, and cover with sharp mexican cheese melted, I tried it, it was good,

Take a lb. of velveeta and a can of Hormel chili without beans and melt in a crockpot or microwave or even a double boiler !!! Mix and serve with chips !!!
