Roasted Garlic Cauliflower

Yields: 6 servings
"Wonderful roasted cauliflower, my 11 year old son loves this! Add more spices and herbs to suit your taste."
INGREDIENTS:
2 tablespoons minced garlic
3 tablespoons olive oil
1 large head cauliflower,
separated into florets
1/3 cup grated Parmesan cheese
salt and black pepper to taste
1 tablespoon chopped fresh
parsley
DIRECTIONS:
1. Preheat the oven to 450 degrees F (220 degrees C). Grease a large casserole dish.
2. Place the olive oil and garlic in a large resealable bag. Add cauliflower, and shake to mix. Pour into the prepared casserole dish.
3. Bake for 25 minutes, stirring halfway through. Top with Parmesan cheese and parsley, and broil for 3 to 5 minutes, until golden brown.

Baked Whole Cauliflower

"If you thought you didn't like cauliflower, try this! It's an awesome treat for a festive table. Beautiful presentation and something out of the ordinary."
INGREDIENTS:
1 large head cauliflower
1/2 cup seasoned bread
crumbs
2 tablespoons grated
Parmesan cheese 1/4 cup margarine, melted
1/8 teaspoon garlic powder
1/8 teaspoon salt
1 pinch red pepper flakes
1 pinch dried oregano
DIRECTIONS:
1. Clean cauliflower, and trim off leaves and any brown spots. Place the whole head of cauliflower into a steamer basket, place the basket in a large pot, and add one inch of water. Cover, and bring to a boil over medium heat. Cook for about 20 minutes or until tender.
2. Preheat the oven to 375 degrees F (190 degrees C). In a medium bowl, mix together the bread crumbs, Parmesan cheese, melted margarine. Season with garlic powder, salt, red pepper flakes, and oregano, and mix well. Place the head of cauliflower into a baking dish, and coat with the breadcrumb mixture.

One of the simplest ways is to chop it into fairly small pieces, then cook in the microwave (covered) until somewhat soft but not limp. Then place a serving on the plate, and add a pat of butter (or margarine, or "buttery spread")... then grate parmesan cheese over it and mix it up a little so it's all over. Really yummy and a good way to prepare and eat cauliflower quickly and where it doesn't have "that taste" of cauliflower.
(you can use the pre-shredded parmesan from the refrigerator case, or grate it from a real brick of Parmigiano-Reggiano, but I personally wouldn't suggest sprinkling on that horrible "Parmesan" stuff in the green can ....yukko.
P.S. I keep my brick of parmesan (or purchased container of shredded parmesan) in the freezer so I can use it anytime... on cauliflower or spaghetti, etc.... no need to thaw to use, and lasts forever that way.

Cook the cauliflower along with two sliced-up onions. When it is completely cooked through and soft, blend it up in a blender until totally smooth. Add salt, pepper, and herbs to taste. Serve hot.
One cauliflower makes a lot of soup - adjust ingredients to serving size.

Go buy a bag of frozen cauliflower and follow the directions on the bag. Get a jar of Cheeze Whiz take the top off and warm in the microwave for a minute !!!! Be sure and drain your cauliflower before you serve it !!!!!

Steam whole or broken into individual florets, Serve with a brown butter sauce. Serve raw florets, with ranch dressing or other blue cheese dressing as a dip along with other veggies. Steam and mash with chicken stock and use in place of mashed potatoes. Go to http://www.cauliflowers.com/ for lots of other ways to cook and serve cauliflower.

Wash Cauliflower, then Steam and Purree, season with Salt and Pepper to Taste (white Pepper) and whip with Cream and Butter......

Treat it just like broccoli, just remember that it's more delicate and can turn to mush in a heartbeat, How about, break it up into pieces, florets, and saute in olive oil with just a little garlic ground pepper and salt?

Steam it in water. Add salt and pepper. Cook til fork tender and serve with butter.

it depends....you can make it in several ways. i usually steam it to keep it somewhat crunchy still and drizzle it with olive oil. or you could blanch it for several minutes. or you could roast it in the oven with olive oil, garlic, and herbs. yum!
