why sulfates are added in medications such as morphine, magnesium, iron, etc?

Such sulfates can engage in covalent bonding with most elements and produce distillable species. Many sulfate salts are highly soluble in water too. By using sulfate, it would be make the preparation easier to use.

Because they all have to be administered as a salt - you can't just feed someone magnesium ribbon if they have a magnesium deficiency.
